Tender Italian Baked Chicken

Cracked Caramel Pumpkin Pie

I love this! The texture of the pie is superb and then the surprising crunch of the cracked caramel topping takes it over the top! If you like pumpkin pie and wonderful presentation, you must try this recipe!

Slow Cooker Mongolian Beef

I've never had Mongolian Beef in a restaurant, so I wasn't sure what to expect. It was simple to put together...I reduced the amount of sugar after reading reviews, but I didn't change anything else. My main complaint it that it was basically just sweet meat...not bad, but sort of one-note. We added some red pepper flakes and it was much better. Next time I'll cook it with added pepper. Not sure if it will be authentic Mongolian beef, but it will suit our tastes much better.

Milky Way® Cupcake Icing

I wasn't sure after reading the review if this was going to be a hit for us, but I'd bought the Milky Way candy, so I forged ahead. I frosted Martha Stewart's yellow buttermilk cupcakes. Cut back on the butter and increased the milk a bit. Didn't measure the powdered sugar, just added and mixed with a hand mixer until it was the consistency I wanted. Even after chilling in the fridge, it coats the cupcakes more like a glaze than a frosting. My husband's comment was, "It's ok, but not one of my favorites." I'll take a few to work tomorrow and see if they're more of a hit there.

Cream of Mushroom Soup I

This is super delicious! I've been trying different mushroom soup recipes lately and this one is my current favorite. My only changes were to sauté the onion in a little extra virgin olive oil before I added the mushrooms and broth. I also added a tablespoon of white wine because I don't keep sherry around. I can't wait to eat this! It's a cold, rainy evening and fresh soup is going to hit the spot.

Pizza Dough I

I can't figure out how this gets such high ratings. I followed the directions to the letter, my yeast was fresh and I checked the temp on my water...110. I usually make Jay's Signature crust from this site, so I can make dough. This never rose, was very dry and hard to"spread" on my pizza pan and although it appeared done, it was like biting into raw, hard dough after I added the toppings and cooked again. If I knew what went wrong, I might try this again, but I'll stick to pizza on nights I have time to let the dough rise.

Cream of Mushroom Soup

So delicious! Simple, easy and so, so mushroomy! I used a mix of cremini and white button mushrooms and it made a lot, which is what I wanted to have for lunches all week. It was a bot thinner than I expected, but that's easily fixed with less broth.

Asian Style Meatloaf

My husband, who as a rule, doesn't care for ginger, loved this. I adore ginger, but wasn't crazy about the flavor combination! It was easy and unusual, though, and I'll make it again just because my husband enjoyed it so much. Served it with roasted asparagus topped with toasted sesame seeds and jasmine rice.

Black Beans and Rice

My college freshman daughter was home for the weekend and I made this for her because she loves it at school. It was simple, quick, and very tasty. I didn't change a thing and she ate it a couple of times and said it was better than what she gets at school.

Hungarian Mushroom Soup

This was so, so, so good! I used shallots instead of onion. After reading reviews, I saw that some people didn't like the lemon and sour cream, so I added just a touch to a small serving before I added it to the whole batch. I'm glad I did, because I very much preferred it without them. I'm not sure if I messed with the authenticity, but if I'd made it with the lemon and sour cream, I'd never make it again, so that's a good thing! I'm craving it right now...

Cinnamon Coffee Frosting

I used very strong coffee instead of instant, and no milk. It holds up beautifully and was a lovely presentation, but all I could taste was the cinnamon. Still, it works very nicely with Harvest Pumpkin Cupcakes from this site.

Harvest Pumpkin Cupcakes

Only made the cupcakes...the icing didn't appeal to me. They were SO SIMPLE! Took about ten minutes from start to having them in the oven. I filled my liners 3/4 full and got 24 very nicely sized cupcakes. Iced them with cinnamon buttercream and they made my husband very happy! His first comment when he walked in the door this evening was, "Those look really nice!"

Super Simple Biscuits

Quick, easy, tasty. These will work well for easy breakfasts for my husband...he can just zap them in the microwave and add butter and jelly. I hope others give them a try now too.

Crustless Spinach Quiche

Fairly easy...I don't find frozen spinach easier than fresh...don't like all the squeezing to get rid of excess water. The rest is very easy. I added some nutmeg. The flavor is fine, but not outstanding.

Chicken and Red Bean Enchiladas

Some will disagree with me for giving five stars to a recipe that I changed, but I did not change the integrity of the dish. Instead of rotisserie chicken, I cooked my own boneless, skinless chicken breasts wrapped in foil in the oven with rotisserie seasoning. I shredded those and proceeded with the recipe. I also added some jarred salsa in place of part of the tomato sauce. These were simple and delicious and make a quick weeknight meal. I served them with cole slaw; we'll be adding them to our regular rotation.

Good for You! Granola

Since I discovered how great granola is made with olive oil, my family has become addicted to it. I make 3-4 batches on the weekends and send them to my college-age kids and my husband often eats it for breakfast. It's good sprinkled on Carbmaster yogurt for me. I've used various kinds of dried fruits and sometimes change up the flavor, adding cinnamon or pumpkin pie spice. Easy and healthy, what could be better?

Candy Corn Bark

I don't care for this kind of thing, but I made it for a school pot-luck luncheon today. Before the first bell rang at 7:45 this morning, I had two teachers in my classroom begging for the recipe...I made it exactly as written, except I topped half with the candy corn and sprinkles and the other half with milk chocolate M&Ms and increased the raisins (I used golden) by quite a bit. Simple, simple, simple. Not something to eat every day, but a for an easy fall/Halloween treat, you can't beat this.

Kickin' Crunchy Oven "Fried" Chicken

Quick and easy! Reminded me of making Shake-n-Bake back in the day. (and I helped!) the seasonings were uncomplicated, but I didn't find it particularly spicy. I did appreciate the review from CC about how many cups of cornflakes make 3/4 of a cup crushed, because my grocery store hasn't carried cornflake crumbs in years. I served this with Crash Hot potatoes and roasted broccoli and *really* appreciated that it had a high cooking temp...that way I could cook everything at the same temp.
