Texas Caviar I
Very good. Had to make a couple changes based on what I had available. I used about 1/2 cup of dressing and that was plenty strong. I also used pinto and black beans, and added some corn. Excellent as a dip and we heated the leftovers and put it over rice.

Peanut Butter Noodles
Loved this. I used about half the peanut butter recommended and threw in some corn starch to make up for less peanut butter. Also added about 1 tsp of cilantro. So good!!!

The Best Vegetarian Chili in the World
Loved it. Omitted the chili peppers (I'm kind of a wuss), but kept the jalapenos. Was between mild and medium. Also, I use canned crushed tomatoes instead of whole peeled. I just wasn't doing the whole crush-by-hand thing successfully.
