Orange Rice

I adapted this to non-instant long-grain rice like so: fried the orange zest in butter with half an onion and a garlic clove, then cooked one cup of rice in one cup of orange juice and one cup of water (plus salt to taste). Didn't add any mandarin segments. The rice had a pale yellow colour and obvious citrusy taste, but was still savoury. Very nice!

Breaded Chicken Fingers

Wonderful recipe! I used half breadcrumbs, half potato flakes, a bit of parmesan, and added my own seasonings. Double-dipped, fried in half an inch of oil, and they turned out the tenderest chicken fingers I've ever had.

Wonderful recipe! Worked even without the cream of tartar and -more surprisingly- without an electric mixer. That's right, with just a metal bowl and a whisk (and lots of elbow grease, of course)!

Bread Pudding II

Used this recipe to turn a days-old baguette into a delicious bread pudding. Used only 1/2 cup of sugar, left out the raisins, used half nutmeg and half cinnamon. Delicious with cream and honey, or with yoghurt!

Garlic Carrots

Fantastic dish! I mixed all ingredients in a baking dish (plus some mushrooms for variety) and added a squirt of apple cider vinegar to add a bit of zest. I baked it for 30 minutes covered, sprinkled some cheese on top and baked 10 minutes more.

Creme Fraiche Chicken

Absolutely delicious. I halved the recipe, but used the double of wine, or perhaps more (to prevent the chicken from drying out while simmering, mostly) and no sour cream, just creme fraiche. Very tasty, fairly easy to make.

Dark Chocolate Cake I

Made this with strong coffee instead of water, two tablespoons more cocoa, and half-butter and half-applesauce. Baked in a single pan. The texture was great, and the cake was very moist, but it was a little bit bland to be had on its own. With the One Minute Chocolate Icing, though, and a bit of strawberry sauce, it was amazing. Will make again!

Sunshine Chicken

Delicious! Substituted the corn syrup for honey, and added a splash of hot sauce, a touch of Cajun seasoning and a bit of paprika to the sauce; broiled for the last five minutes to get a crispy skin... perfect with baked potatoes (which you can make at the same time)!

Creamy Au Gratin Potatoes

Wonderful. Following suggestions, I chopped the onion and sauteed it with bacon bits and mushroom slices, and swapped the cheddar for mozzarella, but otherwise followed the recipe exactly and got a delicious, comforting, easy side-dish!

Carrot Soup with Potatoes and Cream

Made this as stated in the recipe, except that I used fresh ginger (1 tbspoon), dill (1 teaspoon) and paprika (1/2 teaspoon) as the spices... delicious, comforting fall/winter soup!

Crispy Chicken Strips

So wonderful! The coating turns out deliciously crispy, while the chicken inside is so tender and juicy... I used one egg with a bit of hot-sauce instead of the egg-substitute, and bread crumps, potato flakes and several spices. Fried them in about 1 inch of olive oil until golden brown. They keep well in the fridge and can be warmed in the oven later!

Super Easy Chocolate Cupcakes

The texture was perfect, and they were incredibly moist, but the taste was a bit bland. However, with a mocha variation of the One Minute Icing, they were perfect and a great hit with my friends!

Five Ingredient Ice Cream

Wonderful recipe! I had to beat the cream by hand, but it was easier than I thought. I divided the batch into one half to which I added a cup of chopped strawberries and a touch of honey, and one half to which I added two tbs of instant coffee dissolved in a tablespoon of water... both are incredibly delicious, and it's so easy to make! One of the best recipes I've found in this site, I'll be making this all summer!
