Jimmy Dean Breakfast Casserole

This was fantastic! I made mostly minor changes because of available ingredients. I used low fat Jimmy Dean sausage, cooked with chopped red peppers and onions. I also sauteed the mushrooms and combined with sausage mixture. Super easy to combine the night before and pop in oven in the morning. I put in a deep oval casserole dish so it was a lot thicker and actually served about 8 people. Adding this one to my recipe box!

Grandma's Peach French Toast

Excellent! I did have to add some milk to the egg mixture to make it creamier. Pouring it over the bread left it too dry - I had to press the bread down to absorb more liquid. (Next time I'll dredge the bread slices as recommended by others.) I also cooked for longer, about 45 minutes, mainly because my guests were late. Everyone this morning raved about the flavor. Didn't need any syrup at all.

Cowboy Mashed Potatoes

It's so simple, I'm almost embarrased I didn't think of it. I added WAY more garlic, and had to omit the corn because I was out (will definitely add it next time). Used real butter, but only about 3 tablespoons, plus about 1/3 cup milk and sharp cheddar. My kids and husband loved it! Boy, I sure did too! This will be a regular on our dinner table. (And, the name DOES help with preschoolers.)

Chili Chicken Stew

Taking the advice of the other reviewers, I decided to add extra flavor to this recipe. I cooked cubed chicken breasts with onion, garlic & peppers, plus a little cumin and season-all. I also subbed a can of Rotel tomatoes for the plain tomatoes and cut back on the broth, making it more "stew-y". Overall, very tasty. We ate this over noodles, but will try Mexican cornbread next time.

Summer Garden Pork Chops

Great flavor! I did end up subbing the wine & vinegar for the stock, and it turned out just fine. Used onion (no leeks) and canned tomatoes, too, but I don't think that made a fundamental difference in taste. The cinnamon and allspice really give the chops a that extra "something". I prefer herbed rice and a nice green salad with this dish. A loaf of breadmaker bread rounded out our meal nicely. Even my preschool aged kids enjoyed this pork chop dish. Good job!

Harvest Rice Dish

What a tasty dish! Wonderful with pork tenderloin and a fresh cucumber salad. The timing on it is exactly perfect - start it 45 min. before you eat and you're good to go.
