Best Brownies

Whoever said these brownies were hard or chewy was seriously wrong. I used half apple sauce/half butter, and these still came out incredibly fudgy. I also added about a cup of dark chocolate chips and completely omitted the frosting. A true brownie does not need any! I also reduced the sugar to 3/4 cup. Overall, these were very, very good.

Roast Sticky Chicken-Rotisserie Style

Wow! This was so good and incredibly tender! The next day all I had to do was shred some of it, put it in the microwave, and then mix some BBQ sauce in it and it was just like a pulled pork sandwich! The chicken is so tender that it works. For those of you concerned as there are mixed reviews on the cooking time, I cooked it exactly as it says. I didn't even use a meat thermometer... I know it's bad. The slightest change I might make for next time: double the spice mixture and rub it under the skin.

Spicy Garlic Lime Chicken

For those of you unsure of what to do with all of the varying reviews- I made the recipe exactly as written, except I added 1/2 tsp. of cilantro because it goes so well with lime. It was great.

Basic Cream Cheese Frosting

Awesome. Like another reviewer said, this is a real cream cheese frosting. If you don't like it at first, guaranteed your taste buds will be satisfied by adding more sugar.

Cajun Crawfish and Shrimp Etouffe

Really, really good. For those of you concerned with how "spicy" this dish is, it's really based on interpretation. Some people said it was too spicy. I don't think it's spicy at all, and I added the cayenne. It just depends on your tolerance level. Overall, yummy and quite healthy as well.

Best Big, Fat, Chewy Chocolate Chip Cookie

Wow. Just made these today, and they were AWESOME. A few things: I didn't refrigerate the dough, as another reviewer suggested, and they came out perfect. You definitely don't need to do that. Also, I like to use whole wheat flour when I bake and I used 1 cup whole wheat flour and 1 cup all purpose. I also used dark chocolate chips and these were perhaps the best cookies I've had.

Clone of a Cinnabon

OH MY GOD. These were so good! I made them with all I Can't Believe It's Not Butter and I definitely recommend- as a reviewer suggested- letting it rise in an oven set to 200 degrees of you don't have a bread machine. Leaving it to rise on its own didnt particularly work for me, unless of course you let it rise in a warm room.

Actually Delicious Turkey Burgers

These were awesome. I must say the nice thing about this recipe is that it truly is a basic recipe. For someone who isn't familiar with making homemade burgers, but is an experienced cook, I found this to be very helpful. I followed the main components of this recipe (the ratio between the turkey:bread crumbs:egg), but altered the rest of the recipe slightly. Number one, I was oddly out of onion, so I used dried onion flakes. I used dried parsley (also do to the lack of it in my kitchen), and added dried basil, lemon pepper, and crushed red pepper flakes. I also used the salt, keeping it to a very small amount because the seasoned bread crumbs should have that covered. I served this on a whole wheat bun, and with perhaps one of the best burger toppers- grilled pineapple- amazing! (To grill it, I just used the pan I made the burgers in for about 1 minute on each side). All I can say is wow.

Lite Carrot Cake

OH MY GOD. This was amazing. OK, let me share with you all what I did. I followed the ingredients exactly except: #1 I didn't have buttermilk, so I used skim milk, and #2, I added based on other reviews, 1/2 tsp of allspice, ground cloves, and nutmeg, and increased cinnamon to 2 tsps. All I can say is wow. I also made an alternative form of frosting because I didn't have cream cheese or powdered sugar: 1 c milk, 1/4 c flour stirring constantly over medium high heat as it thickens and boils, then add to creamed 1 c butter 1 c granulated sugar and 2 tsp vanilla. This was delicious!

Downeast Maine Pumpkin Bread

Reaallly good. Okay, a few things here: number one, I don't agree with the statement that you should add larger amounts of any of the spices if you like your pumpkin bread spicy. This was amazing the first time I made it, but lacked the second time when I added more spices based on other reviews. Second, this is WAY better the second day. Don't judge it the first time you eat it. When you try it the second day after the flavors have mixed together, it is so much better. Overall, awesome recipe, especially if you stick to what it calls for.

Homemade Black Bean Veggie Burgers

Soo good! I couldn't find my food processor so I just cut the veggies by hand and it was amazing. It just gave these burgers a really healthy feel with all of the onion and green pepper jutting out of the black bean part.

Smokin' Scovilles Turkey Chili

Awesome! This is the best chili I have ever had, hands down. I actually went out and bought the ingredients I didn't have, so you're not going to read about how I substituted this for that or altered the recipe one bit. It was spicy- the way I like it, extremely hearty, and as a fan of putting healthy spins on traditionally unhealthy meals, very satisfying. You will not be disappointed by the lack of hamburger meat. Thanks for sharing!

Thai Cucumber Salad

Very good. I didn't have any jalaoenos so I used crushed red pepper as a substitute. It probably altered the flavor a bit but the salad still had enough kick. I also used crunchy peanut butter instead of regular peanuts. It gave it an interesting addition to the mix of textures in this salad. It was very refreshing.
