Thai Curry Soup

I had to improvise a bit since I didn't have red curry paste (used curry powder) or lemongrass, but the end result was amazing. My dad tried it and said it tasted like something from a restaurant. I wanted a coconut curry soup and feel like I found exactly what I needed to be creative again in the future, as this is a great base!

Spiced Quinoa

I wanted a different recipe for quinoa, since I usually make it with black beans and Italian sausage (another recipes on AR). I'm glad I found this! It had great flavor. I didn't have raisins, so I used Craisins, and almonds for pine nuts. I was sort of nervous about the cinnamon, but it seemed to add depth and tie everything together. Thanks!

Awesome Egg Salad with a Kick

I loved this! I used creamy horseradish; it was all I had. I liked the zippiness! Thanks for a great recipe that I'll probably always use for egg salad!

Company Couscous

I found this recipe several years ago and have been working with it ever since. I usually use the fresh veggies I have in my fridge. Today I added celery, carrots, mushrooms, and turnips. I saute everything and cook the couscous separately with chicken bouillon. I love it. Today was the first time I made it in the oven, with feta on top and a drizzle of Italian dressing. I love the versatility of this recipe! Thanks!

Sesame Shrimp Stir-Fry

Thanks for a great recipe! I've never been a huge teriyaki fan, but teriyaki shrimp sounded good today! I made this with peppered cilantro rice. I didn't have cornstarch or ginger, but i added mushrooms and marinated the shrimp in the teriyaki with the spices. It was pretty spicy...but that could've been my fault. I love crushed red pepper and even added a dash of wasabi. I'm going to be making this again!

Italian Sausage Soup

I absolutely loved this! I've made sausage soup before, but this recipe was so simple and delicious! It is so versatile...I added corn and quinoa and substituted garbanzos for great northern beans. I even added broccoli!

Polenta with Italian Sausage

This was pretty tasty. I think it needs onion and more garlic, though. Should definitely serve with crusty bread.
