Apple Cranberry Crisp

this tasted really very good, not too sweet and not too tart. it might bee a good idea to (very) coursely chop the cranberries first, a whole cranberry can be very tart if you bite into too many in one mouthfull, but definitely a keeper!

Cherry Angel Food Cake

this cake turned out great! i didn't have cream of tartar and used self-rising flour but this was not a problem. i will add more cherries next time (maybe fresh ones) and fold them in rather than just laying them on the batter. i think i will only add 1 C. sugar next time too, but all in all 5 stars!

Pumpkin Casserole

this was a little too sweet for a side dish, but if served warm/room temp with a little whipped cream it would make an easy "substiution" for pumpkin pie! Actually, this would probably work well if baked in individual bowls.

Absolutely the Best Nacho Dip Ever

Very good, maybe not the best ever, but definitely worth making again! I added some onion and garlic powder to the cream cheese mixture for a little more taste. Also, use finely shredded lettuce (works better with the chips).

Apple-Raisin French Toast Casserole

this turned out much too sweet for my taste - too much syrup. the bread part was kind of bland compared to the apple/syrup mixture. i dont think i will make this again, unless i use only 1/3 to half of the sugar and add more spices to the bread mixture. if you like very sweet and a lot of syrup this would be a good recipe.

Spinach and Mushroom Salad

this was really good! i have made it several times since trying it for the first time. i add more bacon than called for and do not always break the stems off of the spinach, but that doesnt matter. my husband likes it too (has even requested it) and he doesnt like raw spinach!

Chunky Pear Butter with a Lemon Twist

This tasted really good, but I thought it was a bit too sweet (only used 3/4 C sugar) and it came out quite runny. Not like the spreadable "applebutter" thickness I was looking for. But that was probably my own fault, I didnt cook the fruit until soft and then simmer for an hour. I put it all into a slow cooker on high for a few hours, then used hand held blender to puree. I added some cornstarch to try to thicken it up, but that didnt work. I used lemon juice instead of the liquor (didnt have any) and omitted the zest (didnt have any of that either).

Peanut Butter Frosting

if you like peanut butter, this is the one for you. made it with an "oily" peanut butter, and it turned out fine, a better quality PB would result in a better product. It did need a bit more cream + splash of milk,. Will make it again.

Banana Cake II

the batter tasted really good, was a bit thicker than a from-mix cake. added 1/2 tsp more vanilla. I baked in 2x 9 inch rounds, the cakes rose ok, not over the edge of the pans, but I think that might have more to do with my oven than the recipe. they smell really good, tomorrow I will frost with peanut butter frosting. after I cut it I will know if its a 5 star recipe ;-)

Rhubarb Strawberry Crunch

This was really good! I had never cooked with rhubarb before and didnt really know what to expect, but this turned out great! I used 3/4 C sugar in the fruit, and accidentally made a bit more topping than was called for. This threw off the fruit/crisp ratio slightly, so next time I will use more fruit :-) Also, added a few dashes of ground nutmeg and cinnamon to the topping and melted the butter instead of trying to "cut" it into the topping mixture. A keeper.

Mom's Coleslaw

This was really good. I used about 2/3 of vinegar called for and added 1/4 C plain yogurt, dash salt and dash black pepper. I think it was a tad too sweet as is (thats why 4 stars), so next time I will start with much less sugar and add to taste. I did add a handful of raisins (yum!). The dressing isnt too runny and even omiting the carrots wasnt a problem (didnt have any). A keeper!

Three Bean Salad

this was really good! i used frozen green beans (thawed them first), omitted the celery (forgot to buy it), added about 2 tsp more honey and prepared mustard instead of dry (didnt have dry). also didnt let it chill for 2 hours (no time), but it was still really good!! this will become one of our standard BBQ side dishes. NOTE: some people complain of their being no crucnh, I always make this with fresh green beans (still no celery), problem solved :-)

Brookville Hotel Cream-Style Corn

a keeper! the taste was good, not too sweet or salty and it was very easy to make. i used canned corn, about 1C cream and added a splash milk (it didnt seem to have enough liquid). i also followed another reviewers suggestion and used my hand held blender to give it a few blitzes to cream some of the corn too. worked great!

Four Spice Crackles

This is really a good recipe if you like a lot of spices! I added slightly more than the recipe called for, and they turned out quite good (note: do go easy on the ginger if you are adding more than called for). although I didn't try it, I think they would be very good broken up and eaten with vanilla ice cream!

Blueberry Coffee Cake II

Made this last night, it was so easy and came out great. I used canned blueberries (drained). I also added some vanilla extract. Following a users suggestion, I increased the recipe by 1.5 (instead of 2C flour, 3C,etc) and made it in a 9x13 pan. Glad I did :-) I will make this again.

Creamy Chocolate Frosting

This is so good! It whipped up nicely, I did add 1 more Tbsp. of evaporated milk and about 1/2 Tbsp more cocoa. We frosted cupcakes and I've stored the leftover frosting the fridge to use later, I hope it holds up. It is too good to throw away.

Roast Leg of Lamb with Rosemary

this was really good! the meat turned out nice and juicy and the flavor of the marinade complmented the lamb very well. i used dried rosemary and it turned out fine. i will make this again, perhaps for a holiday lunch. an added bonus: when grilling the outside of the meat becomes nice and crunchy!

Mock Chocolate Cookie Crust

This was very easy and tasted great, like a famous cream filled sandwich cookie. I made it as a base for a chocolate espresso cheesecake and since it was still slightly warm when I poured the batter in and baked, the top sort of melted and created a very thin layer of gooey chocolate between the crust and cheesecake. Some guests commented that the crust was the best part of the dessert, lol

Banana Pancakes I
