Lemon Pie Bars

Reviewed: Nov. 12, 2013
After reading the reviews, I had planned on doubling the filling, but at the last minute, decided to try them first as written. The ONLY change I made was that I forgot to add the reserved 1/4 c. of flour to the filling. I used my food processor to blend the flour, powdered sugar, and butter (not softened), and the crust was perfect. I like the crust/filling ratio. I think it would be overwhelmingly lemony to double the filling. It took 3 fresh lemons to get the 1/2 cup of juice and 1 T of zest. For those who aren't familiar with zesting a lemon, only zest the yellow exterior, don't zest into the white. And, finally, for those who complained that they weren't as thick as pictured, if you look closely, you can see that the ones in the photo are actually 2 bars stacked. I tried this recipe after trying Chef John's, and prefer this one. They're delicious! :)

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 10, 2013
Doubled the recipe, but forgot to double the fat (was switching to all butter rather than butter/shortening combo - then only put in 1 c. instead of 2 c.), the good news, the were still great - - and with less fat!

Cake Mix Cookies VIII

Reviewed: Jun. 19, 2010
First time making these. I didn't read any reviews first, so had to double check the recipe after making the cookies and reading the reviews!! I had it in my head that the recipe called for oil instead of butter. I did decrease the oil to between 1/3 and 1/2 c. I also added Andes mint chips instead of chocolate chips. Oh, also....I rolled the dough into balls and flattened them slightly with the bottom of a cup dipped in flour. They were AMAZING!!! So, if you're in a pinch and don't have butter, oil works great!! :D

Simple Whole Wheat Bread

Reviewed: Jan. 19, 2010
Wow! This bread reminds me of the ones brought out by nice steakhouses at the beginning of your meal. Like others, I added whole flax seed and decreased the honey by half. I also used a higher ratio of whole wheat flour. I recommend using a high quality flour.
