Rhubarb Dream Bars

This was excellent, even though I was not sure how it would turn out. I used raw sugar instead of white, coconut and soft whole wheat pastry flour instead of all purpose for more minerals and fiber. Very good, I could not stop eating more than one! o yes, only 1 and 1/2cups of sugar was enough!

Baked Beef Stew

I run a daycare in my home so I decided to make it for kids' lunch today. I only use the potatoes (tripled the amount), since not all like cooked celery and carrots. I did not have dice tomatoes so I just used a can of tomato paste. I browned the meat (put some flour on it first) in coconut oil, and baked all in pyrex glass pan with aluminum foil as a cover. After we came back from our morning walk, the kids commented on how nice the house smells! They each had a big portion and loved it, the meat was sooo tender. This recipe will become part of my daycare menu for sure!

Grilled Lamb Burgers

these were really good, i did not have some of the intredients like cilantro, fresh mint and white wine vinegair, and no grill or barbeque. I cooked in some ghee in cast iron pan, and everyone including the kids loved them. served them with sliced tomatoes and onions. Also fried some onions until soft and brown in the leftoever fat, and topped the lambergers. Will be making again with missing ingredients added!

African-Style Oxtail Stew

I made this today, following recipe as is, but did not add celery and onions since kids don't like them cooked. Also, I thickened the gravy with minute tapioca since did not have corn starch on hand. It was soo good! Will be making it at least twice a month now, thanks for the recipe!

Rhubarb Crumble Pie

I made this for my birhtday party, and everyone loved it, i had to give away the left over pieces to the guests so they can also enjoy them at home. I try to substitute some things with healthier things always. I used spelt flour, and unrefined can sugar and some maple syrop in this recipe. I found though with the substitution it needed extra 20 min in the oven. It was very good though!! will be making again when spring comes and rhubarb grows in my backyard.

Hungarian Goulash II

I will be making this recipe again, next time more of it! I added sliced portobello mushrooms instead of onions (kids don't like them cooked) and organic beef broth instead of water. I tried some crockpot recipes before but they did not turn out well, so I did not know what to expect with this one - but it was soo good! I served it with pasta once, and the next day with mashed potatoes. I used stew beef.

Roasted Turkey Legs

I made one turkey leg a few night ago - instead of celery though i put some dried herbs behind the skin, pepper, salt, and same on the skin with some olive oil. i roasted it in cast iron pan. the meat came out tender, with nice crunchy skin. My daughter who is picky about what meat she eats ate it all up (next time i will make 2 legs - it was so good that my husband and 2 kids did not left much for me). It also depends on what meat you get - i like getting turkey from farmer's market, the store ones don't taste as good. will be making again!

Lentil Soup

I made this recipe a couple of nights ago and I loved it. I dice the carrots in small pieces though since i don't like the round pieces. Next time i will try to puree it so the kids eat - they will eat fresh carrots and celery, but not in soup. :) In pureed soup everything looks the same :) For sure will be making it again, thanks!
