Quinoa and Black Beans

This was our first time eating quinoa. This recipe was great. I did everything the same except I only used 1 can of black beans and I used chicken broth instead of the vegetable one. This recipe makes for a lot of food if you just eat it for a side. It is only my husband and I so we actually had it on 3 different occasions before we were done with it.

Spaghetti Squash I

Loved this recipe. It was our first time eating spaghetti squash and it was delicious. I did what someone else suggested and put water in the baking sheet with the squash to get it tender quicker. I did not have olives or feta so I skipped those. I did put a lot of black pepper and minced garlic and it was very flavorful.

Stuffed Portobello Mushrooms

My husband and I loved it. I just changed 2 things. I changed the sausage to be spicy pork sausage and I did not add bacon because I forgot to buy it. It came out great. I also just used 5 portobollo mushroom because they were big. 1 of them filled each of us so they are very filling.

Poinsettias

Very good, simple recipe for a drink. You can also just buy a pink moscato champagne and add the cranberries and it looks exactly the same without having to add the cranberry juice. Also I bought the regular sized cranberries so I put like 6 and they floated on the top but it did not make it difficult to drink.

Chicken Gruyere with Sauteed Mushrooms

Very juicy, yummy chicken. I was worried because some people said that it would be bland or too dry. So these were the changes I made: 1) dipped the chicken in egg before putting into the flour 2) added basil, garlic powder, onion powder to flour in addition to the dill weed & salt, pepper 3) I just let the flour on the chicken get yellow on the frying pan instead of brown 4) I sauteed the onions first, then the mushrooms and then added the wine 5) I did not use the gruyere cheese (too expensive) so I put parmesan cheese and put slices of swiss cheese to put on each piece of chicken. My husband and I loved it.

Tender Italian Baked Chicken

Loved it! I added thyme, rosemary, parsley, and oregano to the mayo mix. I also did what others said and for the last 5 min broiled the chicken. Very tasty, my husband thought it was great too.

Double Layer Pumpkin Cheesecake

Made it for Thanksgiving. Everyone loved it. By reading previous reviews I made some changes. I used organic pumpkin filling and did not add the cloves or nutmeg. I added 2 extra tablespoons of sugar. When pouring the layer for the cheesecake I did 1 1/2 cups instead of 1 cup, that way you can really see and taste the cheesecake. I baked it at 350 for 1 hr and left it 1 hr in the oven so that the crust would not crack. This is great for people who are not really into pumpkin pies.

Broiled Tilapia Parmesan

Really good cheesy and tangy recipe. I did add garlic powder, paprika, and dill weed seasoning. I had 4 Tilapias loins and a lot of the mixture left over so put the mixture on one side and broiled it until it was brown. I flipped the tilapias over and poured the rest of the mixture on them. They were delicious!

Southwest Stuffed Chicken

Loved it and I hate chicken. I did make some changes: used pepper jack instead of monterey jack, used cans of diced tomato with green chiles, Italian bread crumbs and did not use butter or flour. It was delicious. I just need to get the tucking in the sides better so that that cheese does not come out.

Never Enough Green Bean Casserole

Everyone loved this dish for Thanksgiving and people were asking me for the recipe. I did everything exactly the same with the exception of using Velveeta. I read previous reviews and used the Kraft Cheese Spread in Old English. I used almost the entire spread and I also used a lot of extra real bacon bits. This is such an easy recipe I could not believe how great it came out.

Mahi Mahi Rockefeller

Very yummy recipe. I used turkey bacon instead of the regular bacon. Next time I think I will not add salt when cooking the fish because it came out a bit on the salty side (once you add the bacon and cheese), but then again I usually do not add salt to any of recipes so it my just be my taste buds.

Stuffed Green Peppers I

Great recipe. I did some changes after reading some of the reviews. I cut the peppers lengthwise, I added green onions instead of the white onion, I added oregano, basil, cayenne pepper and I used tomato paste instead of the soup. I only used 3 bell peppers too. I also did not add the rice because I am limiting my carb intake.

Unbelievable Chicken

Yummy marinade. I did everything exactly the same except I did not have ground mustard. So I just got regular mustard and covered the chicken in it before putting the chicken in the rest of the mix.
