Homemade Mac and Cheese

My men loved this easy recipe. I wish I had seen the tip about 8 oz. of macaroni equaling 1 3/4 cups, before I cooked this. I was confused by what 8 oz was and ended up having to boil more macaroni when I had way too much cheese sauce. Not a problem though. Like others, I thought the sauce was a bit bland so I added dry mustard, salt, pepper, onion powder, garlic powder and a pinch of paprika. I'll be making this again for sure.

Custard Cups

Maybe it was my microwave, but my custard didn't turn out. I added the heated milk very slowly as I beat the mixture, but when I poured the mix into the custard cups, it seems like some of the cups had more "egg" in them than others. After cooking, the cups had watery liquid on top of the custard and tasted a bit like sweet vanilla scrambled eggs. Strange.

Chocolate Zucchini Bread II

Like others, I used 1/2 cup oil and 1/2 cup of applesauce. I didn't add a full cup of chocolate chips or walnuts...maybe a 1/2 cup each. I also used one cup of white flower, one cup of whole wheat flour and one cup of white whole wheat flour to make it healthier. It tasted amazing! My boys loved it and I will be making it again.

Stuffed Green Peppers I

Everyone loved these stuffed green peppers...even children who do not normally like green peppers. I used brown rice that I cooked about 75% and then didn't add extra water to the recipe. Next time I would put shredded cheese on top of the peppers before I bake. Overall, really good and a great way to use up all of the peppers from the garden.

Pizza On The Grill II

My husband has made this grill pizza twice now and it's AWESOME! It's just like brick oven pizza. He does have to keep the grill very very low, and he used two burners out of four burners so that the crust did not burn. He also brushed the crust with olive on both sides. Amazing results. We will be making this regularly now.
