Luscious Spinach Artichoke Dip

Reviewed: Apr. 25, 2011
I altered mine a little. I cut out the cream cheese completely to avoid the extra calories/fat, substituted the sour cream with plain yogurt, doubled the garlic, and used about 1/2 cup of three cheese (parmesan, asiago, romano) blend in the dip. I also sprinkled just a little extra along the top once it was in the dish. I found that just throwing everything in the blender for a quick spin worked really well and made this dip super easy to make... but I'm sure following the recipe would yield good results, too. Anyway, this turned out delicious and I will certainly make this again!

Imitation Meatloaf

Reviewed: Sep. 16, 2010
Pretty tasty! I made a bunch of changes, though. I added 1 tsp ground cumin to the lentils as they were cooking, substituted 1 cup of bread crumbs with Stovetop stuffing (I ran out of breadcrumbs), substituted the soy sauce for worchestershire, grated a carrot and threw that in, and used a sharp cheddar cheese instead of mozzarella. I also doubled the amount of hot sauce and topped the loaf with a thin layer of BBQ sauce and more sharp cheddar cheese. For a vegetarian meatloaf, this came out much better than I was expecting. I think with a little more tweaking it could be 5 stars - It still came out a tad bland, but still good.

Magic Peanut Butter Middles

Reviewed: Aug. 30, 2010
I'd give this 5 stars for the taste, but the cookie dough was impossible to work with! It was way too dry and it cracked while I was trying to wrap it around the peanut butter balls. It says in the directions to flour your hands which only makes things worse! I would either cut the flour down or add a bit of applesauce next time, these did not turn out pretty.

Mujaddara Arabic Lentil Rice

Reviewed: Aug. 18, 2010
Very yummy! I would also suggest adding just a dollop of plain yogurt when serving to give it just a little tang. Other than this this recipe is awesome.

Vegetarian Chickpea Sandwich Filling

Reviewed: Jun. 17, 2010
I made a few changes to suite my tastes, though. I didn't have celery so I used an orange bell pepper instead for similar texture. I also used fresh dill weed because I just prefer fresh over dried. I also doubled the amount of mayo but I'm sure it would've been fine with 1 tablespoon. Served it on toasted honey whole wheat bread with pita chips on the side - Absolutely delicious!

Chocolate Velvet Ice Cream

Reviewed: May 24, 2010
I'm rating it 4 stars because I had to alter this in order for it to turn out properly. I cut down the cream to just 2 cups and then substituted 2/3 cups of whole milk to make up the difference. I increased the amount of cocoa powder to 1/2 cup and added about 1 tsp of salt and vanilla extract to help bring out the flavor. I also decided to make this with just an electric hand mixer. Instead of chilling in the refrigerator, I put the well-beaten mixture into the freezer for about 2-3 hours and made sure to beat it very well afterward. I repeated this two more times (basically until it got to the soft-serve stage) before finally allowing it to sit in the freezer overnight. It turned out wonderful! I will make this again with the alterations, but this is a very good base to work with otherwise!

Oatmeal Chocolate Coconut Chewy

Reviewed: Apr. 14, 2010
Good recipe... Only thing I had to change was the cook time. 12 minutes was way too long and the bottoms came out burnt... 8 minutes was plenty of time for the next batch.

Aunt Anne's Coffee Cake

Reviewed: Mar. 18, 2010
This turned out really good but I was surprised that it did not call for brown sugar in the steusel... Next time I think I would make it with part brown and part white. I also added some chopped walnuts to the streusel for added crunch and I would highly recommend doing that to others unless you have a nut allergy. Also, I did not have any eggs on hand so I substituted them with applesauce... The cake still came out moist and delicious. I will definitely make this again! Thank you!

Black Magic Cake

Reviewed: Jan. 21, 2010
I was very skeptical of how this would turn out because as others have said, it looked very runny. I'd also never added coffee to cake before, so I worried about the flavor totally overpowering it. All my worries dissolved when I took my first bite of this cake. It is the most delicious, moist, wonderful cake I have ever had! I made two for Thanksgiving and frosted them with buttermilk frosting. I would've preferred a glaze kind of like in the picture, but I was strapped for time. It was still delicious and has room for many other topping options! Next time I want to try and make it with some sort of raspberry glaze. Mmmm. Just... Amazing. This is a keeper!

Pizza Dough III

Reviewed: Jan. 21, 2010
This is a wonderful recipe to use as a base! I did have to make some changes. First when dissolving the yeast, I suggest adding 1 tsp white sugar. I'm also not a huge olive oil fan (for cooking) and used sunflower oil in place. This I feel gives the dough a much lighter, crispier flavor. To give the dough a little more flavor I would also suggest adding an italian herb blend (garlic, basil, a little rosemary). The recipe says to "beat well", but what I would do is just use your hands throughout the entire process and knead it in the bowl until a stiff dough forms, then turn out onto a flat surface and knead for a couple more minutes before placing the dough in a lightly oiled bowl for 1/2 hour. The cooking temperature was a little off, too. I baked mine at 400ยบ for 15 minutes. Depending on your oven it may need more time, but 15 minutes was all it needed in my oven. The result was a crispy crust with a soft inside. I use this recipe with my modifications every time I make pizza! Thank you for posting this! =)

Indian Chicken Curry (Murgh Kari)

Reviewed: Jan. 19, 2010
I made only a few changes: - I omitted the cilantro (didn't have it, don't care for it that much). - I added chopped red pepper in with the onion - I used sour cream instead of yogurt because I didn't have yogurt Other than that, this was an amazing dish! The color, the texture, and flavor were all wonderful and I have already gone and bookmarked this to make again. Thank you for sharing this!
