I can't rate this recipe 5 stars, because I didn't make it as written. I did however, test out three carrot cake recipes, and S.warren's changes made it the best.
If you follow the modifications listed by s.warren's comment, it's a 5 star cake. I'll copy and paste her directions here..."instead of using 1 1/4 C oil, I used 3/4 C oil and 1/2 C applesauce; instead of 2 C white sugar, used 1 C white and 1 C brown; used walnuts instead of pecans and added 1/4 teaspoon of nutmeg".
The applesauce really cuts down on the greasy aspect. Also, I am not a fan of pineapple taste or texture in my carrot cake. So this is perfection.
