I needed to whip up a batch of red velvet cupcakes for a 40th birthday party...the hostess of the party provided this recipe. I am so glad she did. These will be made frequently in my house. So simple and delicious!

Ohmigosh! These wound up being INCREDIBLE. I also want to add, that I think they were at their best on day 2. They didn't taste so great right out of the oven, but once they cooled completely...YUMMY! I added a splash of extra milk because most of the previous reviews suggested it. I was hesitant at first to do so, because the batter looked "moist" enough already (maybe because I used larger bananas?). But, it wound up being the right decision. My husband is rather skeptical of my baking skills because I've had a few things not turn out so well, however, he gave his thumbs up on these. Give these a try...you'll be glad you did!

Wow! What a great recipe! Husband loved it... kids loved..and I loved it. The next morning the leftovers were made into a great breakfast burrito. Another hit! Thank you Charlie for this new recipe that will probably be cooked weekly from now on! Oh..and did I mention how easy it was.

I served these potatoes with a meatloaf and my husband said, "Don't lose this recipe." Although, you must allow time for the potatoes to cool, it was well worth it. Five Stars *****
