Chicken Stir-Fry

my first time making stirfry, not to bad! i only used 3 breasts and i still felt like there was too much chicken not enough veggies. doubled the ginger, soy, chicken bouilion and water and added cornstartch at the end for a thicker juice. let simmer while the rice was cooking for ab 10 mins and veggies were perfect texture. great flavor! will make again.

Eggplant Parmesan II

yummm this was delicious! i had so much eggplant from the garden so i tried a few recipies, and this was rated the best by far! i only used one large eggplant and i baked them about 10-12 mins on each side (untill golden brown/crunchy) even better leftover the next day!

Cajun Chicken Pasta

yumm! i used sourcream instead of the heavy cream. and also took advice and used creole seasoning for the chicken. wish the peppers were a little softer. deffinatly a keeper!

Balsamic Roasted Red Potatoes

i couldn't get mine to crunch! left in the oven for and extra 15 mins! used a little more oil and just a pinch of nutmeg. otherwise- great taste with the balsamic and other spices. wasn't running or saucey.

Cottage Meatloaf

For my first meatloaf, this came out awesome! Had no leftovers!! did replace the tomato juice for worcestire, a little more bread crumbs and doubled the sauce to put on top. cooked for an extra 10 mins (may just be my oven) No pink but very tender and fell apart rather easily. That wasn't a problem though! simple and delicious! will make again.

Jammin' Beef Stew

this was my first time making beef stew and it was great!! used leftover flank steak (cubed) from a few nights ago, skipped the jam only beacuse i did not have any on hand, and added an extra TBS of worceshire because my boyfriend is a huge fan. very tasty- thickens well with cornmeal!
