Perfect Lemon Curd

Delicous! I doubled the lemon zest. Also melted the butter and sugar on low heat until the sugar was dissolved then added the lemon juice which cooled down the mixture a bit before i added the eggs last so they didnt cook. I then turned up the heat a bit and stirred until thick. A great way to use up lemons.

Cube Steak Parmigiana

Very easy to make. I used bread crumbs instead of crackers and doubled the sauce after reading other reveiws. I grilled the steak after coating it, instead of frying it, which gave it a nice golden colour. Also baked it for 15minutes after putting sauce and cheese on so cheese was nicely golden and sauce heated through properly.

One of the nicest chocolate chip cookie recipes i've tried. I didn't have any peanut butter cups so added a 1/3 cup of roughly chopped unblanched peanuts which added an extra crunch. I didnt have enough butter so replaced it with margarine and the cookies still turned out great. Will definatly make again!

Russian Tea Cakes III

Delicious! I substituted the walnuts with 1/2 a cup of roughly chopped dark chocolate. I found i didn't need to chill the dough and baked them for 13minutes. The second time i made them i substitued the butter for reduced fat margarine and they still turned out the same.
