Garlic-Lemon Double Stuffed Chicken

Our family actually gave this 4 1/2 to 5 stars. The flavor was wonderful and it looked great served. I added an extra tablespoon of lemon juice and I think next time I would cut down the sliced cheese (cream & Cheddar) by about half. Aside from that the kids and adults all loved it!

Big M's Spicy Lime Grilled Prawns

My 10 year old son loved these. He must have eaten about 30 of them on his own. They were spicy but that didn't stop him from eating more and more. I did add a little oil to the blender to get the sauce to mix easily. I only had about 3 hours to chill before cooking but they still came out great. A nice change of pace for the family. I served with white rice and salad.

Willy's Juicy Steak

Simple and not overpowering. I mixed it up at work and then took it home with me for a wonderful dinner. Kept the meat very moist and flavorful! I could only locate 1 inch steaks but they worked just fine.

Cheesy Ham and Hash Brown Casserole

Excellent and easy. I added more ham to the recipe. Popped it into the oven, went to soccer practice and came home to a nice warm meal. I set the temperature a little lower on the oven to compensate for the additional cooking time. The kids loved it.

Moroccan Chicken

Flavors were wonderful in this chicken dish. I did over cook the chicken just a bit but it still was a winner. I left out the tomatoes and also used chicken tenders. Also ran out of lemon juice and ended up leaving it out. The lemon juice was not missed.

Key Lime Cheesecake I

This was simple and had a wonderful light flavor. I was not able to locate true key lime juice but regular lime worked just fine. Would make again in a heart beat!

Bourbon Chicken

I used cut up chicken breasts in the recipe and only marinated for an hour or less. Cut cooking time down a little. It was excellent.

Cajun Appetizer Meatballs

Bangers and Mash

I altered the recipe a bit I used turkey italian sausage to cut down on fat. I also used butter buds in the mashed potatoes - again to reduce the fat in the recipe. I doubled the gravy which was fat free. It was nice to enjoy the recipe with a healthy twist. I did butterfly the sausage after cooking on the pan to make it easier to serve. We enjoyed the recipe.

Brown Sugar Chops

Very good and moist but pretty sweet. I did remove the sauce and thickened in a sauce pan with corn starch and then poured over the top of the chops when served. My chops stayed moist but I did reduce the cooking time in the oven just a tad.

Tropical Chicken I

Pretty good chicken. It did come out of the oven pretty pale in color. I served it with white rice. The next day we took the left over chicken and made chicken salad sandwiches. Everyone loved them.

Crab Quiche I

Easy to prepare and a big hit at the office. I purchased frozen crab meat at about 1/2 the price. It was suggested by the butcher and he said that the flavor and taste would be the same as purchasing the fresh alternative. He was right!

Mandarin Orange Chicken

Simple and easy. I did doubled the sauce in the recipe, added a few more nuts and also cooked the chicken with 3 cloves of crushed garlic. The whole family liked it.

Cola Sauce Chicken

My family liked this recipe. Amazing that no one could pick out the cola taste. I did cut the sody by 1/4 cup and added more chicken broth. All around everyone liked it. Next time I will use a bit or salt.

Sweet and Sour Meatloaf

Very good and easy to make. Leftovers make great meatloaf sandwiches. I did use a sweetener substitute but I think just sticking with regular sugar might be a little better. I used Splenda and I think it made the sauce a little tart. I would also like to figure out how to decrease the carbs in the actual meatloaf – instead of bread crumbs maybe almond flour?
