Smoked Salmon Deviled Eggs

Reviewed: Jan. 19, 2009
I hate to be the first to review a recipe and give it a poor rating but this was not a hit with my family. It came out very dry and the flavor of the salmon was overpowering. I attempted to add more mayo but nothing seemed to help. Four family members tasted it and none liked it at all.

Restaurant-Quality Maple Oatmeal Scones

Reviewed: Oct. 3, 2008
I do not have a food process or but it mixed up just fine without one. I also substituted the dried cherries with dried cherry flavored cranberries (a lot less expensive). I used raw sugar for the tops instead of plain white sugar. These were a real hit with my family and co-workers. I will definitely make these again.

Amazing Italian Lemon Butter Chicken

Reviewed: May 21, 2008
My family gobbled down this recipe in record time. It was a huge hit with no leftovers. I would say that the instructions need to be modified a bit to include cooking the bacon and crumbling it before doing anything with it later in the recipe. My sauce never seemed to thicken but it worked just fine as it was once I tossed everything together. Also next time I would cut up the chicken, toss with flour and then cook. I think it would be easier to handle this way and would cook a lot faster. I would honestly say I was in the kitchen for at least an hour preparing the meal but it was very worth the time and effort. I think some of it could be done ahead of time to save time in the long run. All and all for a first attempt we loved the recipe and were willing to ignore the calories because it was fabulous! Thanks, Grandma for the inspiration!

Taco Bake I

Reviewed: Apr. 20, 2008
This was great. I served it with corn chips for a fast dinner one night and it was gobbled up. It was even good as a left over for lunch. Nice for those busy evenings when you need to slip something in the over quickly after being out at sporting events all evening.

Sausage Cheese Squares

This was a great quick recipe for a church gathering. It turned out nice and flavorful. We did not find it to be too greasy. It was a great recipe in a pinch.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Apr. 20, 2008
This recipe was a huge hit with the family. I made a double batch and hardly had any left. I had to cook it in two batches but it was excellent. We were a little liberal with the garlic and tossed in a few extra cloves. We also did the same with the mushrooms. Our whole family loves Balsamic Vinegar so we kept the amount as listed.

Orange Curried Chicken

Reviewed: Mar. 2, 2008
I took just about everyone’s tips and hints into consideration when whipping this dish up. I used boneless chicken breasts, less water, 1 small can of crushed pineapple and soy sauce instead of salt. I also reduced the cooking time and added ½ tsp red pepper to kick up the flavor a bit. All and all the whole family liked it.

Colleen's Slow Cooker Jambalaya

Reviewed: Jan. 16, 2008
This was excellent even the kids raved about it. I did add cornstarch the last hour of cooking to thicken up the broth and served it over steamed rice. Also I was out of onions so I used my Tastefully Simple Onion-Onion product and it was great. I have never made Jambalaya before but this recipe is a keeper.

Smothered Filet Mignon

Reviewed: Jan. 1, 2008
This was very good and a great recipe for New Years Eve dinner. We did make two small changes and used Hot and sweet mustard (we did not have any Dijon handy) and we did use crumbled gorgonzola instead of the blue cheese. It was a hit with both adults and kids. Yummy!

Three Cheese Manicotti II

Reviewed: Dec. 29, 2007
Flavor was great and the recipe was quick but I had the same issues other's mentioned. Not mater how delicately I handled the noodles they all ripped open. I had to sort of roll them closed. I was able to serve them intact but made a huge mess as I was assembling them. I think I will follow other peoples advice and will fill them hard next time and cook them in the oven in the sauce. The kids enjoyed this recipe.

Crispy Marshmallow Balls

Reviewed: Dec. 16, 2007
I was so tired of cookies that this was a great recipe to stumble upon. I used real butter and mixed rice crispy cereal (1/2 chocolate and 1/2 regular). I also did the assembly line right at the stove and kept the butter, caramel, milk mixture on a low warm while I worked on a double batch. We used metal meat kabob sticks and they were the perfect length for easy dipping and rolling. The kids loved helping with this one.

Pesto Cheesy Chicken Rolls

This was very simple and easy to prepare. My kids enjoyed it and picking up only four ingredients is a snap. I didn’t make any modifications to this recipe but I see that others have some good suggestions.

Chipotle Crusted Pork Tenderloin

Reviewed: Dec. 4, 2007
I would 100% recommend decreasing the chipotle spice that is so prominent in this recipe. A little goes a long way. I was going to warn my husband about decreasing the spice but he had mixed the seasoning before I had a chance. As it stands the chipotle is very overpowering and was so hot that we had to trim off the outside of the pork. However, even after this we think with a small modification to the spices (as others have recommended) it is still have a very flavorful and easy recipe. We will definitely make it again.

My 13 year old son made these and they are wonderful. We did not modify the recipe but should have made a double batch. They were gone in 24 hours! Wonderful and easy!

Bacon and Bourbon Thanksgiving Stuffing

Reviewed: Nov. 22, 2007
This is our new family favorite for Thanksgiving. We did decrease the chicken stock down to about 2 cups of liquid from the original amount it called for. Also the recipe is missing the part where you add the bacon back into the mix. But we just tossed it in there when we were doing the mixing of all of the ingredients. The flavors are excellent and we even used a little extra burbon in our gravy.

Sour Cream Chicken Enchiladas

Reviewed: Sep. 19, 2007
I did make some modifications to the recipe so it was not as spicy for the kids inclusing adding 1 cup each of sour cream and cheese to the filling and reducing the hot salsa that I added. But the combination of flavors was a hit. One of my boys does not like Mexican food and even he liked it. The kids ate the left overs the next day on Ritz crackers.

I think this was a wonderful addition to Thanksgiving. I made my own bread cubes with wheat and white bread. I also used Jimmy Dean's Sage Sausage. It really was a hit!
