Mexican Casserole

Reviewed: Dec. 16, 2010
I added green chilis, taco seasoning, and 1/2 can of corn, and no chili powder. Brings back all the right memories. When I was a teenager playing soccer, my mom would have this ready after practice-- I swear I could eat half a pan! Different from Mom's, but still GREAT!

Avocado Smoothie

Reviewed: Nov. 27, 2012
Don't know what to say other than that this was heavenly. Just what I needed. And my toddler was nuts about it! One word to the wise, though: there is such a thing as too much of this stuff, so you better have someone to share with!

Broiled Tilapia Parmesan

Reviewed: Dec. 29, 2011
This has been a standby recipe since I discovered it a year or so ago. My extended family has some "discerning" (read: picky) eaters, and they all will eat it. I usually make it as it's written, and have enjoyed it paired with Cafe Rio style cilantro rice.

Shrimp Burritos

Reviewed: Apr. 17, 2013
I did a lot of tweaks but used the original as a base. I cooked the rice as written in the original recipe. I cooked the shrimp with garlic powder, a dash of garlic salt, and 12 oz of corn. No beans, no sauce, no salsa. Just put rice, shredded cheese, corn, and shrimp in a tortilla and wrapped that sucker up. It served its purpose and it seemed much faster than it would have been if Id gone with the original recipe, though I'll have to try it as written some time, too.

Mom's Coleslaw

Reviewed: Mar. 15, 2011
WOWEEE! As others have mentioned, I used a preshredded cabbbage mix (cut me some slack, I'm 9 months pregnant and took the easy route), but stuck true to the recipe as written. So good! Very refreshing and went perfectly with crockpot bbq pork sandwiches. Oh, yes.

Thai Chicken Bites With Dipping Sauce

Reviewed: Mar. 8, 2011
I cooked the chicken with only the seasoning mix -- AWESOME! I used freshly ground coriander and think that made the extra little difference, too. I served it with peanut sauce and a side of cilantro-lime rice. Yum.

Irish Champ

Reviewed: Oct. 4, 2010
I cut back on the green onion, added some sour cream, and as others have said I mixed a raw egg into it while it was still piping hot. I took it to a St. Patrick's Day dinner and it was promptly devoured.

Honey Glazed Pork Tenderloin

Reviewed: Feb. 8, 2012
I've used the glaze recipe on both pork and shredded chicken. Only change: used 1.25 tbs sesame oil instead of 2. Glaze goes great on both. Husband and baby were absolutely drooling over it.

Cheesy Baked Salmon

Reviewed: Jan. 12, 2012
Made it without the green onion the first time, and it was better that way. Also, used minced garlic, which intensified the garlic flavor (we like garlic). Overall a keeper.

Pasta and Beans

Reviewed: Jan. 3, 2011
I omitted the onion and added diced, raw bacon to the tomatoes while they cooked. I also added some shredded swiss cheese and parmesan at the end then tossed it to let it melt before I served it. Oh yeah.

Chipotle Mayo

I added lime juice and garlic per the suggestion of others. Went PERFECTLY with the black bean burgers I made. My husband said the combo was fantastic.

Cucumber-Mango Salsa

Reviewed: Mar. 15, 2011
This was great with Caribbean style pork. I just wish it were a little sweeter... Maybe I'll try it with really ripe mangos next time. I wish someone would invite me to a BBQ so I could bust this out! :)

Spinach Lentil Soup

Reviewed: Oct. 4, 2010
For fun I added some pork steak and bacon bits at about the 30 min mark to give it a little bit of meat flavoring, which I like. 5 minutes before serving I also tossed in some minced garlic (maybe 1.5 tsp) to make the flavors pop. It worked for me! DH and I were filled up after just one bowl each!

Bean Burrito Casserole

Reviewed: Apr. 22, 2010
I made my own cream of chicken soup for this recipe and it turned out great! White roux base: 2tbs butter, approx 4tbsp flour, 2cups milk, chicken boullion, s&p to taste, a few pickled jalapeno slices w/ 1tsp of pickling juice. Covered it with cheese, too. Oh, baby.

Best Tuna Casserole

Reviewed: Feb. 13, 2010
My husband has a Costco obsession, meaning that when we buy tuna (which he likes, too) we've got 20 or so cans of it. It also means I have to find ways to use tuna in various meals that don't all taste like...tuna. This was a definite winner. I didn't have 2 cans of cream of mushroom, so I added about 1/2 cup of heavy cream and more milk. I also used panko crumbs mixed with garlic butter as the crust instead of chips. Still really good.

Corn Noodle Casserole

Reviewed: Mar. 15, 2011
After reading that it was sometimes dry I added about a 1/2 cup each of sour cream and plain yogurt, 1/4 cup half and half, some frozen green beans, 3 handfuls of shredded cheese, and browned the turkey with herbs de provence for more flavor. I also topped it with panko bread crumbs and a sprinkling of garlic salt and black pepper. 3 stars for flavor plus another star for convenience.

Never Enough Green Bean Casserole

Reviewed: Dec. 23, 2012
It was a little salty, but definitely worth the calorie count. The fried onions I used were flavored so that may have added sodium, but I'm not sure. I'll probably try this again as written.

Greek Style Potatoes

Reviewed: Oct. 12, 2010
Quite good. I was craving Greek potatoes! I served it with pan-seared steak (plain s&p seasoned) and the hubby was pleased. He's excited to take the leftovers to work, too.

Pasta with Swiss Chard

Reviewed: Feb. 23, 2012
I can't believe so few people have tried this! I doubled the recipe, and I used spinach instead of chard. I also added a bit of the juice from the jar of capers. It was very, very good. My husband and I ate the whole thing (our toddler ate a little, too)! Will make this again, since we often have a lot of spinach.
