Shrimp Burritos

I did a lot of tweaks but used the original as a base. I cooked the rice as written in the original recipe. I cooked the shrimp with garlic powder, a dash of garlic salt, and 12 oz of corn. No beans, no sauce, no salsa. Just put rice, shredded cheese, corn, and shrimp in a tortilla and wrapped that sucker up. It served its purpose and it seemed much faster than it would have been if Id gone with the original recipe, though I'll have to try it as written some time, too.

Never Enough Green Bean Casserole

It was a little salty, but definitely worth the calorie count. The fried onions I used were flavored so that may have added sodium, but I'm not sure. I'll probably try this again as written.

Avocado Smoothie

Don't know what to say other than that this was heavenly. Just what I needed. And my toddler was nuts about it! One word to the wise, though: there is such a thing as too much of this stuff, so you better have someone to share with!

Sesame Tilapia

Pasta with Swiss Chard

I can't believe so few people have tried this! I doubled the recipe, and I used spinach instead of chard. I also added a bit of the juice from the jar of capers. It was very, very good. My husband and I ate the whole thing (our toddler ate a little, too)! Will make this again, since we often have a lot of spinach.

Honey Glazed Pork Tenderloin

I've used the glaze recipe on both pork and shredded chicken. Only change: used 1.25 tbs sesame oil instead of 2. Glaze goes great on both. Husband and baby were absolutely drooling over it.

Cheesy Baked Salmon

Made it without the green onion the first time, and it was better that way. Also, used minced garlic, which intensified the garlic flavor (we like garlic). Overall a keeper.

Nany's Cheesy Cauliflower Casserole

This was not our cup of tea. Too salty with the mayo, cheese, crackers, and butter. And the evaporated milk gives it a sweetness that didn't complement the taste of cauliflower. Not going to repeat.

Broiled Tilapia Parmesan

This has been a standby recipe since I discovered it a year or so ago. My extended family has some "discerning" (read: picky) eaters, and they all will eat it. I usually make it as it's written, and have enjoyed it paired with Cafe Rio style cilantro rice.

Cucumber-Mango Salsa

This was great with Caribbean style pork. I just wish it were a little sweeter... Maybe I'll try it with really ripe mangos next time. I wish someone would invite me to a BBQ so I could bust this out! :)

Mom's Coleslaw

WOWEEE! As others have mentioned, I used a preshredded cabbbage mix (cut me some slack, I'm 9 months pregnant and took the easy route), but stuck true to the recipe as written. So good! Very refreshing and went perfectly with crockpot bbq pork sandwiches. Oh, yes.

Tasty, but I felt the need to add more salt to the finished product. Or at least some more flavor. As a comfort food, this is really good over buttered toast in the morning. Mmmm.

Corn Noodle Casserole

After reading that it was sometimes dry I added about a 1/2 cup each of sour cream and plain yogurt, 1/4 cup half and half, some frozen green beans, 3 handfuls of shredded cheese, and browned the turkey with herbs de provence for more flavor. I also topped it with panko bread crumbs and a sprinkling of garlic salt and black pepper. 3 stars for flavor plus another star for convenience.

Thai Chicken Bites With Dipping Sauce

I cooked the chicken with only the seasoning mix -- AWESOME! I used freshly ground coriander and think that made the extra little difference, too. I served it with peanut sauce and a side of cilantro-lime rice. Yum.

Pasta and Beans

I omitted the onion and added diced, raw bacon to the tomatoes while they cooked. I also added some shredded swiss cheese and parmesan at the end then tossed it to let it melt before I served it. Oh yeah.

Mexican Casserole

I added green chilis, taco seasoning, and 1/2 can of corn, and no chili powder. Brings back all the right memories. When I was a teenager playing soccer, my mom would have this ready after practice-- I swear I could eat half a pan! Different from Mom's, but still GREAT!

Greek Style Potatoes

I cut back on the green onion, added some sour cream, and as others have said I mixed a raw egg into it while it was still piping hot. I took it to a St. Patrick's Day dinner and it was promptly devoured.
