Scott (aka: Episcopal Epicure)
About this Cook
When I'm not in the kitchen, you'll probably find me at church because I'm an Episcopal priest. Cooking is my primary creative and stress-releasing outlet.
My favorite things to cook
Braised beef ribs in a red wine reduction is my "comfort food." I enjoy exploring the tastes and techniques of Northern Italy and Southern France, along with good-old American favorites.
My favorite family cooking traditions
My family was an interesting mix of Scandinavian and French, so both traditions were passed along to me. My travels in Great Britain have taught me that British cuisine outshines its reputation.
My cooking triumphs
Sea scallops in a lime butter reduction over safron rice was the pinnacle. I love experimenting with the flavor pairings and textures of pork.
My cooking tragedies
Picture an empty dessert mold, a mostly empty glass platter, and my hands full of Bavarian Cream (while subtly trying to close the door between the kitchen and dining room with my foot).

Macaroni Ham Salad
This reminds me of the ham and macaroni salads served at church luncheons from long ago. I add a cup of chopped celery and a little more mayonaise. If I'm out of dill pickles, a cup of sweet relish works just fine as well.

Ham 'n' Cheese Potato Bake
Great recipe! Heeding other reviewers, I avoided a 'soupy' casserole by following the recipe but using only one can of soup. Omitting the cheese soup makes great scalloped potatoes and ham. Omitting the cream soup makes a great cheesy ham and potato casserole. Two recipes in one! This has become a household favorite for leftover ham.

Vegetable Rice Casserole
This recipe was a real hit at the church luncheon! It made an excellent side dish for the Artichoke Chicken recipe (also from this site). Only a minor change: I cooked the rice in chicken stock as others have suggested, and for a little less time. I used larger amounts of the veggies (about 1 cup of each) and used what I had--fresh peas and asparagus were a great addition of color. Experiemnt and enjoy!
