Lemon Poppy Seed Bundt Cake

This cake was wonderful with a few modifications. I used lemon cake mix and lemon pudding and I added a tsp of pear essence. I beat the egg, oil, water and essence until well blended. I added the dry mix and beat well. With the poppy seed mixture, I added a one eight ounce can of crushed pineapple (well drained) and about a half cup of shredded coconut. It was A M A Z I N G!!!!

Roasted Garlic Scalloped Potatoes

This was a quick and delicious recipe with a few necessary changes. I used cream of mushroom and garlic and cream of garlic with roasted red pepper (couldn't find the potato soup) I used soy milk instead of heavy cream. I love thyme so I used as much as I liked. I mixed everything together and it was delicious. Quick, easy, delicious and kid approved!!!

Spiced Yogurt Pound Cake

This cake is superb with a few changes. I used strawberry banana yogurt with fruit pieces instead of plain yogurt. I added 1/2 tsp mace and 1/2 tsp cardamon. I added 1 tsp lemon flavor and 1 tsp pear essence. I used 1 tsp baking soda and 1 tsp baking powder. I creamed the sugar and butter than added the eggs one by one and mixed well. I added the dry ingredients alternately with the yogurt ending with the yogurt. The batter was too thick and I added a little bit more yogurt. The result; a light, fluffly like a cloud cake and cupcakes!This recipe is a keeper!!!

Blueberry Zucchini Bread

Wasn't quite sure what to expect but this recipe was easy and tasty. I used pear essence instead of vanilla and I substituted 1 cup whole wheat flour. I used 1/2 oil and 1/2 applesauce. I doubled the baking powder and added a pinch pumpkin pie spice. I added a oatmeal crumble topping. Very pleased with this recipe.

Red Velvet Cupcakes

My first effort at red velvet and it was a hit! I used two of the red coloring that comes in the multi pack -and the color was still great. I used buttermilk instead of regular milk. I used 2 teaspoons of pear essence instead of the vanilla and I added a half teaspoon of raspberry extract, wow! Cream cheese frosting on top. This recipe is simple and tasty.

Carrot Cake III

This carrot cake is wonderful with the few changes I made. I used 3/4 cup canola oil and 1/2 applesauce. I split the sugar half white and half brown. I used pear essence and added a half teaspoon nutmeg. I grated the carrots on the large side of the grater. This is my new go to carrot cake. It did take about an hour and twenty minutes to bake though.

Apple Crisp II

5 Stars! Yes the topping was not enough but I will just double it next time. I used granny smith apples (the best for baking) and it was absolutely delicious and so easy to make. It you need a tasty dessert in a flash, THIS IS IT!

Lentil Soup I

Absolutely awesome!!!! I used the brown lentils, no cloves and I didn't have time to fine chop anything, I just did a rough chop. I added a clove of garlic and tiny, simple dumplins, wow!!! I will double the recipe from now on. This is just too delicious. Thanks for a great, healthy recipe! You will need to add more water.

Cream Cheese Pound Cake III

Excellent pound cake. (It was waay to sweet though, I will cut back the sugar to 2 cups) Takes some time to mix, but totally worth it. Use room temperature ingredients. Instead of vanilla I used one and a half tsp of almond extract and a half teaspoon of raspberry extract. It was wonderful.

Mom's Rum Cake

Born, raised and living in the US Virgin Islands, the rum cake is a big part of our culture. I was quite skeptical about this recipe. It just seemed too easy and simple. I made this yesterday and it is AWESOME! Tastes exactly like the ones I'm used too! I did add a half tsp of rum extract for extra flavor-wow! The glaze...well it was not a glaze. The sugar crystalized when I added the rum so it was thick and crumbly and the cake did not absorb most of it and still the cake was great. Next time I will add more butter and melt the sugar in it 1st and then add the water and lastly the rum. I think that should do it. This cake gets a 5 star from me!!

Corn Casserole III

Delicious!! Nothing else is needed. It is perfect the way it is. I drained the water off the corn niblets 1st. Most of the corn bread mixes are 7.5 ouncse so I used a little less of the other ingredients to compensate for the difference. THANK YOU FOR A GREAT, EASY AND DELICOUS RECIPE----KID APPROVED!
