Vanilla Port Poached Figs with Honey Cream
I have made this recipe several times with great results. I won a first place ribbon at our Mid-State Fair in 2011 using this recipe with just one big change. I canned the figs using a water bath method. They were firm and plump and turned out deliciously. If you are into figs this is truly a winner. I added the cream and honey later after opening each jar. Lovely presentation. I think using a vanilla bean is a great addition too.

Chili Rellenos Casserole
Made this recipe for dinner tonight.I used 3 eggs as suggested and dropped the milk. I did add a generous teaspoon of baking powder to the flour which I think helped the mixture become fluffy and light after baking, much like a chili relleno. My husband lovedd it and so did my son. No leftovers with this one. I also used cheddar and pre-grated taco cheese because that's what I had in the fridge. and since we like food spicey I used hot enchelada sauce instead of the tomato sause, which I thought was out of place for this recipe. This is a good standard recipe that can be tweeked to suite you taste. Very good.

Easy Banana Bread
I've made this recipe dozens of times for adult children and grandchildren and friends. It's a very good recipe, makes two loaves or 4 mini loaves and is a recipe you can play with. I like to add cinnamon, chocolate or butterscotch chips to it, different kinds of nuts and have even made a strudle topping for my loaves. Try this one... you will really enjoy it. My freezer ALWAYS has 2 or 3 small loaves I can give as gifts or thaw for afternoon tea.
