Makeover Morning Glory Muffins

I'm going to give this 4 stars mainly b/c these muffins do allow you to substitute ingredients easily and because they have potential. For the eggs, I just used three eggs. I wanted to add more vitamins/fiber so I used banana puree instead of the applesauce. What I did not like at all was the grated apple. I didn't like the way it looked in the muffin, the way it clumped... next time maybe I will just use more banana puree or more raisins instead. The basic recipe is good though and I will be trying it again.

Spiced Butternut Squash Muffins

I read the earlier reviews and, based on those, baked the squash for an hour first then used a little over a cup of squash (someone else said a cup equals 1/2 pound). I also wanted to make them a bit healthier so for the flours I did: 1/2 cup all purpose, 1/2 cup whole wheat and 1/2 cup wheat germ). These were yummy and very fresh tasting. My 1 year old loves them!

Macaroni and Cheese with Caramelized Onions and Bacon

This is amazing!! We are cheese lovers so we used a variety of cheeses (not just asiago and cheddar). We also used parmasan and fontina. Romano would be great as well. Like other reviewers, I think this would be better if the bread crumbs and butter (the dry topping) were doubled. This would be a great thing to bring to a Fourth of July picnic. Honestly, as a main entree, it starts to get boring after a while so it would be nice as a really good side dish with hot dogs or something off the grill.

Best Steak Marinade in Existence

This marinade gave us the moistest New York Strip steaks ever! Next time we might add some extra crushed red peppers because we like things spicy but, overall, it was amazing!!

Lemon-Garlic Green Beans

This tasted great. I think I added too much olive oil so I'll stick closer to the recipe next time (I had a small pool left over). The flovors were great although I doubled the garlic because we're garlic lovers.

Spicy Garlic Lime Chicken

Grilled Lamb with Brown Sugar Glaze

This was a very unique and interesting rub. We used it on lamb steaks but it would have been even better on lamb chops (or just thinner cuts). Next time we might also try to add a little chili powder and see if that makes it even better.

Jalapeno Chicken

This was really interesting. The cinnamon on the chicken was really cool. It ended up tasting a bit like an Indian meal. I simplified the recipe by using the ingredients as a marinade and then baking it. Next time I will use alot more spice - this was not a hot dish at all.

Olive Chicken I

I was eager to try a new chicken recipe but admit I was pretty wary of this one. In the end, it was great! I used most of the ingredients as part of a marinade and then threw it all into a pan to cook together. After reading earlier comments, I figured I should go light one the olives so I didn't even use an entire 10 ounce bottle. They turned out to be great accents. It was nice to make something new! The chicken is perfect with rice.

Easy and Good Honey Mustard Salad Dressing

Basically, this is a good recipe and I was happy to find one that didn't use mayo. However, it calls for ALOT of honey and the recipe doesn't need as much. I ended up adding extra mustard and lemon juice to compensate for the honey. I also used olive oil instead of vegtable oil. Overall, I will use a variation of this again. I'll cut the honey almost in half. I liked another reviewer's idea of using apple cider vinegar. Maybe I'll try that too.

Braised Balsamic Chicken

I actually used this as a marinade and then cooked it all together in a pan (adding the tomatoes when the chicken was halfway done). It's a good recipe. Nothing exciting very tasty and the leftovers will be great tomorrow with salad.

Nacho Dip I

This dip was pretty good. Next time I will use a little more taco seasoning and maybe a spicier salsa. I liked the recipe alot and purposely found one without refried beans but you will find some diehards who wish the beans were an ingredient. Overall, the dip is a decent crowd pleaser but not a huge hit.

Garlic and Basil Vinaigrette

My husband loved this dressing. It does have a strong flavor and would be best on salads with meat. I was making a salad that would have garlic chicken on top so I wanted something that might that some similar flavors. I didn't have fresh basil so I used dried. I also didn't bother chopping fresh garlic and instead used garlic powder. I didn't like the taste of it so I added sugar and lemon juice. After these additions, it was better. I will try it again.

Marinated Spicy Pork Chops

This was a great marinade. I added extra chili sauce, extra brown sugar and some canola oil. Then I had it marinade for two days. The pork was moist and juicy. I cooked the pork in the marinade and used the extra marinade over rice.

Garlic Lover's Chicken

This was so moist and awesome!! Of course, we used double the garlic cloves. Also, based on another review, I marinated the chicken overnight in garlic and olive oil. Once it came coating time, I didn't need milk - The oil helped it stick.

Quick Lemon Dijon Chicken

I used this as a marinade and it was fantastic!! Tangy, flavorful and moist are are perfect words to describe the chicken we had. I actually added some honey just because it seemed like a great match. I loved the recipe and will use again and again!
