Spaghetti Squash I

Delicious! Fresh basil really makes this recipe great. I added about double the suggested amount. I also added some yellow peppers when sauteeing the onions and it was delicious! Everyone loved it.

Amber's Devils on Horseback

This was okay. I loved how healthy it was, but it was very lemony and not much else. I think maybe they would be better with some panko breadcrumbs. Some wasabi mayo helped add some flavor. I also wasn't sure what to serve with it.

Three Berry Pie

Good for how simple it is. I just used a bag of frozen berries and mixed a few fresh strawberries I had with it. I bought frozen pie crusts but couldn't find the double pie crust, so I cut the second pie crust into strips and made a grid for the top. It looked great and no one knew the difference! Serve with some yummy vanilla bean ice cream.

Southern Pulled Pork

This was good. It took much longer to get tender than I thought (I gave it 8 hours but it still wasn't tender) .... I had to keep cooking it in the slow cooker overnight and used it for lunch the next day instead of dinner. Also, I don't know if this is typical but the pork smelled really weird while cooking-- bad enough that my family made me move the slow cooker to the porch. When it was done though it was delicious! Definitely needs a good barbecue sauce!

Beer Bread I

Great bread. I was looking for a bread that didn't need yeast or a breadmaker and this was it! Very simple. I made my own self-rising flour like others suggested (1 tsp. baking powder and 1/2 tsp. salt per 1 cup flour) and also used 1/3 cup sugar as others also suggested. I used Yuengling beer, let the dough sit for 1/2 hour before baking, then covered dough with butter and garlic salt halfway through baking. I served this with beef stew also from this site for which I used the same beer and it was perfect!

Basil Chicken over Angel Hair

Yum! I cooked the chicken in white wine because I was considered it would be a little bland, and it was super flavorful! I also used more basil than called for (I love basil) and sprinkled in a llittle fresh oregano. I used roma tomatoes, which worked well. If making this I would definitely use fresh herbs and tomatoes, because it was the best part! Oh... and serve with a great bread!

Fresh Asparagus Soup

This soup was EXCELLENT! I used chicken broth, skim milk and vanilla yogurt and the flavors were perfect!!! My blender is old and not too strong so I was worried about getting a smooth consistency, but I cooked the asparagus until it was almost mushy and it blended perfectly. I've made this twice so far for friends and it's a huge hit. Thanks for the recipe!

Homestyle Beef Stew

Yum! I used beef bouillon, beef broth, yuengling beer, fingerling potatoes, and a dash of Rosemary and this was delicious! The flavors were almost too powerful so I will use much less of or eliminate the rosemary next time. Also added celery. I served this with Beer bread also from this site and it was perfect!
