Tater Tot Bake

So this was much better than I though it would be, I'm happy to say. I did add extra items, carrots, peas and corn all frozen but all I did the same. I am so surprised that my hubby and daughter liked it. Guess I better keep it on the monthly menu.

Summery Corn Salad

I used light red kidney beans in this with fresh corn. Tasted good but could be better will add tomatoes and cucumbers next time. When I want a Mexican flare I will use black beans and other seasonings. Good all round recipe.

Spicy Fish Tacos with Fresh Lime Sauce

Roast Chicken with Rosemary

Good basic roast chicken! I added garlic and lemon and onion and placed butter slices under the skin. Came our moist and tender. I roasted potatoes and carrots with it and had a whole meal in one pan.

Peppermint Bark

We made this to put in our goodies gift bags for friends for Xmas. We did use foil pans for easy clean up, but realized that the foil doesn't let the choco get cold enough to really harden. So after it set up we took it out and chilled it in a plastic container with a lid. Worked great!

Slow Cooker Chicken and Dumplings

Add chicken broth instead of water, flavor was ok for using canned soup. I'll add veggies next time to try to make it a bit more healthy. Other members of my family do not like dumplings so I just made my homemade biscuits separately and made rice to go with the chicken. Then I put my chicken and gravy over my biscuit.

Lime Chicken Soft Tacos

Nice change from the beef tacos! I surprised by the taste...it all came together in the end, just couldn't see how these ingred. would go together, but they did. The Monterey Jack cheese was the perfect cheese for this! This is a keeper!

My Favorite Stuffed Green Peppers

This is the way our family likes stuffed peppers. We use red and yellow peppers but everything else is as the recipe states. Add a green salad and you have a nice meal.

Chef John's Tzatziki Sauce

So some say this is the authentic tzatiki sauce, well it's not what my family is use too so while it was ok it was different. I followed the recipe exactly. The difference was it was to tangy sour. The greek yogurt just overwhelmed the whole dish. We couldn't taste the mint at all. I let it rest in the fridge overnight but it only made the aftertaste more sour tasting. Think I will try another recipe for this sauce to compare.

Mediterranean Beef Meatball Kabob

Tried this tonight, I added greek seasoning and just cooked the meatballs in a fry pan. We put the meatballs on top of lightly grilled flatbread with Chef John Tzatziki sauce, lettuce and tomatoes. Yummy, 3 of us finished it all.

White Almond Wedding Cake

This was my second time using this recipe but this time I made cupcakes. They turned out wonderful! The batter made enough for 30 cupcakes. I added pink lemonade butter cream icing from another site and my guests loved them! This is my go to recipe for cake!

Hawaiian Chicken Kabobs

You have to so careful not to over cook these especially on the grill. The chicken can easily get dried out and tough. I felt like the taste of the soy sauce was to overwhelming along with the seseme oil. I will cut both down the next time I make this. I also marinated the chicken alone. I did as others suggested and cooked down the marinade adding a little corn starch but again the soy sauce was to powerful, we didn't use it. We will try again, but I appreciate all who made suggestions.

Mexican Orzo Salad

This was awesome! I took it to a party...I was shocked to see it all gone went I went to pick up the bowl at the end of the night. I've had several people ask for the recipe. I did add a pinch of cumin. And for a regular family serving I would only use 8 oz ozro if that, it makes a lot, and lower the quanity of some of the other ingredients.

I followed the directions but mine came out so thick that the food processor couldn't even mix it. I had to keep adding evoo to it to at least get it blended. I was not impressed.
