I made this last night and it was a big hit with me, husband and son. Son does not like onions or peppers but he loved this. I also added two stalks of celery chopped, 4 roma tomatoes chopped and a bunch of garlic granules. Will make this often.

Spinach Enchiladas

Made this yesterday. Thought it would be good but it really wasn't. The mix of enchilada sauce, spinach, and corn tortilla's really isn't a good combination. Better to save all ingredients except the corn tortilla's and make spinach lasagna.

Chicken Navratan Curry (Indian)

I made this tonight and it was very good per my husband and myself. I made a couple of changes though. I used ketchup instead of tomato puree because that is what I had on hand. I also used a whole can of coconut milk instead of 1 cup of coconut cream. Coconut cream is thicker and sweet for mixed drinks normally so I used the coconut milk. I quartered my potatoes lengthwise and then sliced them into about 1/4 inch slices which allowed them to cook in the amount of time given in original recipe.

Simple Time Pork Chops

I made this last night and loved it! I used Adobo in place of all the spices because it incorporated all of them. I put butter in microwave for 15 seconds to soften it and then combined the mayo with it and then rubbed it on the chops. This is wonderful! We put the juice after baking on our rice that I served this with and it was so good. Will make this again!

Chef John's Pumpkin Bread

This bread is very easy to make and it is wonderful! I made two batches at the same time. Going to make it again today. It's good for soups, stews and sandwiches. Electric knife makes it easy to slice for sandwiches.

Crab Rangoon

I made these a few days ago and they are great! Not as good as fried but, still great! They do not brown well because they are baked but that's okay to save on all the grease that comes from frying. The filling was marvelous!

Spicy Chicken and Sweet Potato Stew

I made this today and it is very good! I used canned sweet potatoes because I already had them and needed to use them. I just added them when I added the beans and corn. I also used chicken broth in place of the water. The flavors of this are really good.

Madison's Angel Food Cake French Toast

Authentic Pad Thai

Just made this and it is wonderful! Will be making it again and again. I used the ketchup with some worchteshire(sp) instead of the tamarind because I could not find tamarind paste. I also used boneless pork chop for the meat instead of chicken because that's what I had on hand. This dish is a keeper. I also added a bag of stir fry veggies at the end of cooking.

Lemon Icebox Pie III

I made this today and it turned out great even though I had substitutions. My substitions were, 5 tablespoons of lemon juice instead of juice from 2 lemons. Also 1 teaspoon of orange rind/zest from spice jar instead of lemon zest. Used subs because that's what I had on hand and it turned out great! Juice from 1 lemon is approximately 3 tablespoons at most, so I used 5 tablespoons for the 2 lemons. Will be making this again.

Easy Lemon Cake

I changed it and it was great..probably great as it, but, worked with what I had. I used black cherry jello and omitted the lemon extract. Followed rest of cake recipe. On glaze..I only used 2 tbsp of lemon juice..that was plenty. I poked holes all in the top of the cake before drizzling on. This was very good. Probably good with other flavors of jello too..I am going to try more.

Leftover Pot Pie

This was very good!! Made it a few days ago with leftover turkey I had in the freezer from Thanksgiving. I had frozen the leg quarters and the wings. Used that meat in it. I used 1 can of veg-all and 1 can of green beans for the veggies. I used 1 1/2 cans of chicken gravy because that is what I had on hand. This was fantastic and versatile!!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I just made this and it is really good!! The only change I made was I used fresh baby spinach and added about a tablespoon of water when I added that spinach at the last to add a bit more moisture while the spinach wilted. All the flavors are great together!!

Steff's Shepherd Pie

I just made this for my son to take back to college with him to cook in his on campus apartment. I made it all the way to the point it needed to bake in the oven. I left out the onions because he does not eat them. I used instant mashd potatoes..made 6 servings of them according to package directions. I also topped the potatoes with a little bit more of shredded cheese for decoration. I think he is going to love this. Was very easy to make and pack to send off with him. He loves shepherd's pie and this has all his favorites in it without the onions.

Chicken Wild Rice Soup I

I made this yesterday for dinner and it is very good!!! I had to make some changes due to what I had on hand. I used chicken drum sticks for the chicken meat....boiled them and deboned...got my chicken broth from this too. Then I used skim milk instead of half and half. The soup would have been too thick had I used the half and half. This soup turns out really thick even using skim milk. Will be making this again!!

Loga's Microwave Chicken

I made this tonight and it is WONDERFUL!!!! I cut the recipe in half. I used a pyrex dish to put 4 drum sticks in and just laid them out in a row. I cooked for 5 minutes, turned the chicken over and cooked 5 more minutes. Then removed the covering and turned over again and cooked another 5 minutes. I took the cover off for the last 5 minutes to make the sauce thicker. This turned out great in taste and looks!! I also made another recipe from this site called "Italian Chicken". It was good too. But, the Loga's Microwave Chicken was better. It was more tender, faster, and much less mess and tending too. Gosh, I will surely be making this time and time again!! I even took a picture of it...need to try to figure out how to add the picture to the site. Thank you for this reicpe! Oh..also..my husband that claims he isn't that crazy about curry...he loved it! LOL!

Easy Italian Chicken

I cooked this tonight using only the drum stick of the chicken leg. I used 8 of them and followed the recipe as written except for I used minced garlic from a jar instead of fresh. This turned out great!!!! Will be making this again.

Extra Easy Hummus

Just made this and it is fantastic!! I did add 1 tablespoon of lemon juice from a bottle. Other than that, made it per recipe with all the same measurements and it is very very good! Only had to use about 1/4 of reserved liquid from beans. Thank you for a great recipe!
