Pizza Dough II
I made this recipe in my bread machine, and it was perfect! I warmed the water in the microwave, then added 1 Tbspn of raw, organic honey instead of sugar, then added the 2 Tbspn of olive oil. I put that in the bottom of the bread machine, then started layering on top of that in this order: bread flour, whole wheat flour, and salt. Then I dug a small hole in the middle of the top of the dry ingredients and placed 2 tspns of the dry yeast in the hole. I put the machine on the "Dough" cycle, and 1 hr 35 min later I had perfectly kneaded and risen dough! It made four small pizzas that tasted wonderfully! We didn't even need cheese on top -- just tomato sauce, italian seasoning, salt, pepper, and garlic. Delicious!

Cheese Blintzes
My husband does not like desserts or sweets, so I thought I was safe leaving these on the stove to cool while I was away at work. He almost ate all of them by the time I got home! I'm thrilled to find a new family favorite. I wish I could figure out how to keep the bread crunchy. It wasn't soggy, but it would have tasted better if it had more texture. I brushed the butter on the bread instead of dipping it, in case that helped it stay more firm. It definitely wasn't soggy, so maybe it did help? I'll definitely make it again.

Cilantro Tomato Corn Salad
Delicious! I made tacos and Spanish rice for a dinner party, and this is the recipe everyone asked about! I sauteed the onions and garlic in the butter, then added the jalapenos,. I added two bags of frozen corn to the pan with the tomatoes and cilantro and kept it over low heat until dinner was served.
