Delicious Ham and Potato Soup

Best Spanish Rice

We love this rice and make it all of the time now. We use a spicier salsa to give it a kick and also saute the rice first. Makes good left overs too.

Beth's Spicy Oatmeal Raisin Cookies

This cookies are the best! I used golden raisins and soaked them for 10 minutes in warm water so they would soften up. The golden raisins are a beautiful addition because they have color varaitions of amber, green and purple. I also added a little extra cinnamon. They were delicious and do not last long at my house.

Chicken Florentine Casserole

Great recipe. I made this for family and friends last night and I heard after each bite... this is soo yummy. made just a few changes: I sauteed fresh spinach in a little butter. Lightly browned the chicken in a little bacon grease, cut the bacon prior to cooking and waited until the last 5 minutes to add both the bacon and the cheese to the top. I was worried the bacon would get soggy and did without the mushrooms, since we don't like them. Baked at 325 for 30 minutes. Was delicious!

Kalua Pig in a Slow Cooker

Prepared as directed and was delicious. The next day added bbq sauce and had a pulled pork sandwich with cheddar cheese and frenche's french friend onions (the ones you use for green bean casserole).

Classic Peanut Butter Cookies

Made as others instructed. Added 1/2 cup extra flour and peanut butter. Also, added vanilla. They are super yummy!

Best Brownies

Perfect as is! I loved the texture and flavor. Our second round with these brownies, I added white chocolate chips. The fell to the bottom of the pan and made for a great layer -these are awesome!!

Guacamole

I used this recipe for a football party appetizer. I always get nervous to use a recipe for guests without trying it myself first. I made this recipe as is, but added about a half tsp red pepper flakes.. we like things spicy... it was awesome & everyone loved it. I then used the same recipe for our Christmas party, and everyone who ate it was raving. You cannot go wrong with this one! Thank you!!!

Pesto Pasta with Chicken

I always want to rate the recipe as it is presented. I believe the amount of pesto sauce should be doubled/tripled. With that being said, I made my own pesto sauce and it was wonderful. Great idea to add chicken & sundried tomatoes.
