Baked Potato Salad

Andy, Amanda, Paul loved it. It was good. I used 4 lbs. of red potatoes and 15 sl. real bacon as it says, but it could have used more bacon for sure. Also used a 16 oz. container of light sour cream and about a cup of mayo, probably a cup of cheese plus sprinkled more on top. I used green onion instead of chives. I would try Greek yogurt also.

Oatmeal and Applesauce Pancakes

Delicious. I loved the texture. Liana liked but not as much as the Fluffy Pancakes in AllRecipes that I usually make. I added a slightly rounded T. of sugar and a rounded 1/2 tsp. of cinnamon. Also a bit extra on the baking powder and soda (just a little) as suggested by someone.

Easy Mexican Casserole

Mango Topping

Tasty! I used twice as much brown sugar, twice as much OJ and probably an extra T of water. It was quite thick without that. Used it on Seth's pancakes to make them soft enough after surgery.

Mocha Chocolate Chip Banana Muffins

Delicious!! I used extra coffee, about 1 1/2 T. Would try 2 T. as didn't taste coffee, but they were still great! Also used half applesauce. Very nice crumb to it. Tender and moist but not dense. Second try: I used 2 T. coffee. Great!

Fish and Things Teriyaki Marinade

Made adjusting to 6 servings. Added no white sugar and backed off honey to about 2 1/2 T based on the previous reviews. Used a whole clove of garlic. Also between 1/8 and 1/4 tsp. of ground ginger. Also, didn't have the green onions. It was still good. Used it on fish. I'd give it 4.5 stars except I can't make a half.

Slow Cooker Enchiladas

Delicious! Don't use all the cheese. I think I used under 3 cups. I used plain shredded cheddar. Also, added black beans to the meat and used some extra tortillas. Still very moist. And of course Seth "needed" plain yogurt on his.

Garbanzo Tomato Pasta Soup

Liana made for dinner. She loved it as it had no meat. :) It was easy and good. We doubled and used 2 cups of pasta and used 2 qts. homemade chicken broth and 2 1/2 c. of Lipton Vegetable soup instead of vegetable broth. If I hadn't used the flavorful broth I may have added the oregano that several people recommended, but it really didn't need it. We sprinkled romano cheese on top. Tasty! (plenty of leftovers on a double batch)

Simple Beef Flavored Gravy

For what it is, 5 stars. I did saute the onion in about 1 T of the butter and then melted the rest, added the flour, water and used beef base.

Simple Whole Roasted Chicken

I tripled the spices except for the salt. It was delicious! Used more garlic as well. I loosened nearly all the skin and sprinkled the spices directly on the meat. I also cooked it in the slow cooker for about 5 hours--on low for 4, high for 1. Maybe try making a sauce (gravy) out of the juices?

Shepherd's Pie VI

Delicious! I did not mash carrots but cooked some diced carrots and beans and sprinkled over the cooked ground beef along with some leftover corn. I added some worcestshire sauce to the gr beef (maybe a T or two?) and added another T of ketchup. Also, added about a cup of gravy to the meat instead of the broth stated in the recipe. Changed yes, but loved it!

Pumpkin Chocolate Chip Muffins

I doubled the cinnamon and nutmeg. Also used a full cup of pumpkin. It made 14 muffins that were delicious! I also baked at 375 for about 21 minutes. 20 might have been enough, but 400 would have been too hot, for sure. Will surely do again!

Boilermaker Tailgate Chili

Delicious. I used the meat and tomatoes as written. Used a whole bottle (12 oz) of beer for a double batch. Used 6 cans of beans for the double batch. 1/2 c. chili powder, 6 bouillon cubes, 1 tsp pepper, no salt, 1 tsp. tabasco and 1/2 tsp cayenne. Oh, and no chili peppers. Probably could have used another 1/4 tsp cayenne and another 1/4 - 1/2 tsp of Tabasco. Still, it was great! Lots of work, but great. Maybe could stay at the same spices I used if I would use a can of spicy chili beans, but I used all mild chili beans. Also, it was too big a recipe for 1 pot so I filled the crock pot and the stock pot on the stove. The pot on the stove turned out much nicer. I mixed them though, and it all ended up great.

Blueberry Buckle

I used 3 T. butter and 1 T. shortening just because that's what I had for butter at the time. Also added 1 tsp. vanilla. Baked in a dark pan at 350 for about 35 min (not sure how long)--poke with a toothpick.

Easy Key Lime Pie I

A super easy, fast to make pie. I used 2 cans of sweetened condensed milk, 1 c. of lime juice and 4 egg yolks. I suspect 5 might have made it a bit more firm. Then I divided it between 2 pie crusts. A quick dessert. Wasn't Chloe's fave, but the rest of us liked it.
