Garlic Cheddar Chicken

Made this for dinner last night. Absolutely scrumptious and husband loved it! I used 1/2 plain and 1/2 seasoned breadcrumbs. Also for added crispness, I used another reviewer's suggestion and placed a thin layer of coarsely crushed Texas Toast brand cheddar and garlic croutons at the bottom of the baking dish. I used Perdue's thin cut boneless, skinless chicken breasts. At 350 degrees, it took longer than 30 minutes to cook in my oven so I turned it up to 450 degrees for an additional 15 minutes and then broiled the top for about 3-5 minutes. Gave it a nice golden brown color and as I said - SCRUMPTIOUS!!

Marinade for Chicken

I marinated boneless, skinless chicken breasts overnight in this marinade and I'm sorry to say that this made the chicken waaayy too salty. I even omitted the 1 teaspoon of salt and added 2 Tablespoons of brown sugar but still - much too salty. When I realized this upon removing the chicken from the oven to taste a piece, I knew right away that my husband would not like it because he does not like a lot of salt on his food. I rinsed the cooked chicken under hot running water to wash it off. Luckily, I had on hand a bottle of Wegman's Spicy Orange sauce to brush over the chicken (it is somewhat sweet) to counteract some of the saltiness and my husband said it was good. (he had no idea what I went through). However, I will be searching for another marinade recipe. Sorry.

Chicken In Basil Cream

Tried this recipe last night for dinner. It was absolutely sensational!! My husband literally raved about it and woke up this morning saying what a good dinner we had last night. I used the thin cut chicken breasts to save cooking time but otherwise followed the recipe exactly as written. Don't make the mistake of thinking that you need to season your chicken before cooking it because the cheese, butter and basil seasons it just right. Will definitely be making this one on a regular basis. Can't wait to try that sauce on fish! Had the sauce with fish (Tilapia) the following night. Just as awesome!!

Accidental Fish

This dish was soooooo good! My husband gave it a thumbs up and said it was a definite keeper. I used Cod because Mahi Mahi is hard to find in my area. Beside the type of fish, the only change I made was to add more hot sauce (about 1 1/2 teaspoons). Served it with Roasted Chicken Couscous and a broccoli/red pepper/onion vegetable medley. Delicious!

Salsa Chicken

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

I love good food and there are not too many foods that I do not like. However, I don't know what all the rage was about that sauce. I made it last night - followed the recipe exactly as written - and it just did not taste good. Sorry.

Boneless Buffalo Wings

Needless to say - these were scrumptious!! Didn't need to change a thing other than to double the coating mixture!! Also, I used Perdue's chicken tenders instead of the larger boneless chicken breasts and they came out perfect! I can now stop searching for the perfect chicken finger/boneless buffalo wings recipe because I've found it. During the first bite, before my husband could even swallow it, he pointed to the chicken and said "you can definitely feed me these again!!" It was soooo funny the way he said that. Thanks Bettycook for a wonderful recipe.

Pesto Cheesy Chicken Rolls

I made this for dinner last night and it was very very good! My husband said he liked it and that it was a definate keeper. To save myself the trouble of pounding the chicken breasts to 1/4 inch, I bought a pack of the Perdue Fit 'n' Easy thin cut chicken breasts which makes it a lot easier to roll and cooks in less time! (30 minutes at 375 degrees and it turned out excellent. I served mine with garlic mashed potatoes and fresh string beans. Great meal. Will do again.
