Lemon Muffins

I took others' advice and added lemon juice from a whole lemon, and 1 tsp vanilla essence. I tossed in a cup of frozen blueberries too. Beautifully fluffy and yummy - even with replacing the egg with 1 tbs ground flaxseed + 3 tbs water.

Fabulous Cilantro Pesto

Catherine's Spicy Chicken Soup

Made this today and it went over really well! Did the one pot thing by cooking garlic, onions, and then chicken and dry ingredients in olive oil first and then adding canned ingredients. What I did different: 4 chicken breast halves, about 64 oz chicken broth, one can diced tomatoes, 1 can tomato paste, 1 cup salsa, 1.5 cup frozen corn, 1 can black beans, 16 oz plain yogurt, about half or 3/4 of the spices

Baked Teriyaki Chicken

I made this last night and it turned out great! I didn't have low-sodium soy sauce so the level of sodium felt a little scary - will try that next time. I put baby carrots in the dish and used chicken breast. I think next time I'll add peas and onions too. GREAT over rice! Also considered wrapping the breasts with bacon but that would drastically cut the healthiness, I think.
