Turkey and Quinoa Meatloaf

This was delicious! So different, and loved the flavors. I scaled back on the hot sauce quite a bit, but would probably do 1/2 TBS next time. Great way to get a ton of protein in a yummy, hearty meal!

Quinoa with Veggies

Delicious!!! Spices are so yummy! I just used frozen stir fry veggies I had in the freezer-but I'll use fresh ones next time. Cooked quinoa in chicken stock. Great side dish or meal

Simple Sweet and Spicy Chicken Wraps

This was delicious! I thought the cayenne pepper spice was perfect, but my boyfriend doesn't like spice at all, so I think I would just omit it from the mayo next time and just add it to the chicken. I added some diced tomato and cheese to the wraps, too. Just delicious!

Penne with Chicken and Asparagus

This was really light and yummy. A great pasta dish that doesn't leave you feeling like you gained 10 pounds when you're finished. I seasoned my chicken with Montreal Chicken Seasoning, garlic powder, salt, and pepper before cooking (added a ton of flavor!) I also added some mushrooms and a few extra cloves of garlic to the asparagus and chicken broth. Finally, some re-hydrated sun dried tomatoes toward the end - these were a must have and added tons of flavor as well. Delicious and a great base recipe!

Easy Honey Mustard Mozzarella Chicken

This chicken was SO good and SO easy. A HUGE hit! My boyfriend even mentioned how good it was one more time before he fell asleep. Following other suggestions I made a few changes. I mixed Dijon mustard, a little yellow mustard, the honey, a little garlic, and a little cornstarch to make more of a 'sauce' and spooned that over the chicken. I added some lemon pepper and then put one slice of bacon cut in half on the chicken right away because another reviewer had said the bacon didn't cook in only 10 minutes, and I prefer my bacon crispy. I followed the baking instructions - open the oven a few times to spoon sauce from the dish over the chicken, and added some Monterey Jack cheese toward the end. Perfect, easy, juicy, and delicious!

Black Hills Golden Egg Bake

This is a really great base for an Egg Bake recipe. I used the base recipe, but made a Mexican style bake with spicy sausage, red bell pepper, onion, mushroom, diced green chilies, and served with salsa. Loved the texture with the cottage cheese. I will use this recipe with different variations again and again!

Broccoli Cheese Soup V

This soup is fabulous! I'm eating leftovers for lunch as I type - and it's even better the next day. I did add some minced garlic with the onion and used butter with olive oil & skim milk to cut a few calories. I also used 1 lb of Velveeta and about 3/4 pound of Sharp White Cheddar. I love cheese and Velveeta grosses me out - so I may try it with all 'real' cheese next time, although I am a bit worried about altering the wonderful, thick consistency. I will DEFINITELY make this again - and it really does taste like Panera!

Ginger Glazed Mahi Mahi

This glaze was absolutely delicious! I did bake the fish at 350 for about 14 minutes, and it came out full of flavor. I will make this again and again. The only thing I would say is be careful with the fresh ginger, the flavor is very strong.

Caper Baked Chicken

This chicken was VERY good! I added some artichokes and mushrooms to the pan and served with a baked potato. I used a small stone bar pan and covered with aluminum foil to bake. Turned out very juicy and delicious. I love the flavor of steak sauce, but next time I would probably use half the amount just because the flavor is so overwhelming. Great, simple recipe - and a great way to use up that jar of capers I had in the fridge!

Pesto Turkey Burgers

These were absolutely delicious. I used some 'better burger seasoning' (salt, pepper, red pepper, onion powder) I had from a local meat market instead of seasoning salt, and only used 1 1/2 teaspoons. The pesto & feta combo was fantastic. It's cold in Wisconsin right now, so I cooked on the stop top in a grill pan - only needs 4 or 5 minutes on each side. Careful not to over cook... they'll get quite dry. Fabulous flavor - I will make these again and again. Served on whole wheat bun with lettuce, tomato, and a smear of pesto on the bun. Yum!

Sesame Noodles

These noodles were delicious! I used Thai Rice Noodles - which I highly recommend, used half the sugar, peanut oil instead of safflower since it's all I had, and thought the peanut was a nice flavor addition. Also added cubed chicken, red pepper strips, and mushrooms sauteed in a little sesame oil. Absolutely fabulous! I only used one tsp. of sriracha sauce because my boyfriend doesn't like spicy food, but I'll use two next time, it wasn't spicy at all. This will definitely become a favorite at our house - so many ways to make it your own!

Stuffed Peppers My Way

I love this site! These were both twice as delicious and twice as healthy as other stuffed peppers I've made. I sauteed garlic, fresh basil, spinach, green onion, sea salt, pepper, and italian spices. I added ground turkey, tomato, and used Parmesan cheese instead of feta. The flavors were incredible! Definitely use fresh basil if you can, and the arborio rice (i had leftover) is really hearty and filling (if you can, i would definitely recommend it over regular long grain rice). My only problem was the peppers lost their shape while roasting which made stuffing difficult... but i read a comment about using a muffin pan which is a great tip! My whole family loved this recipe, and you could really add any vegetable, meat, cheese you have on had. Highly recommend!
