Broiled Tilapia Parmesan

This is my favorite way to cook tilapia. I omit the celery salt because I never have any, and add garlic powder and paprika. It's so simple and fast.

Buffalo Chicken Pasta Salad

Tasty and clears out the sinuses. I made several modifications and substitutions due to the pantry situation. I omitted the salt and pepper, subbed celery for the bell peppers, used plain yogurt and blue cheese in place of the dressing, and shredded some leftover roasted chicken. It's delicious warm and I can't wait to taste it cold!

Homemade Chocolate Sandwich Cookies

I usually halve the recipe and end up with enough cookies to make 12-15 sandwiches. I fill with ice cream and store them in the freezer.

Pineapple Upside Down Cupcakes

Yum! My tablespoons of pineapple must have been heaping because it took 1.5 cans of crushed pineapple. Like others, I drained the pineapple and used the juice in a yellow cake mix. The cake batter was very runny, and it took a scant third cup to fill each muffin hole. Thank you for a great recipe!

Baked Teriyaki Chicken

LOVE this sauce. I substituted regular vinegar for the cider vinegar. Will use this teriyaki sauce on other types of meat as well. I didn't bother with the basting, but did reserve some sauce for dipping.

Richard and Suzanne's Famous Red Beans and Sausage

Of the red beans and rice recipes on the site, this is our favorite - kids included. It has the best flavor and consistency. I omit the bacon, green pepper, and butter simply because I didn't have those ingredients on hand or it seemed unnecessary. I also typically make the red beans from dried beans. It's a hearty meal for supper, and it's yummy warmed up and served as a dip with ritz crackers.

Peanut Butter Frosting

I followed the reviews and cut the powdered sugar in half. The frosting was delicious as a filling, but I think it would be too rich to fill and frost an entire cake. I would use the recipe as written to fill and frost a whole cake. I also needed more milk than called for to make it spreadable.

Wisconsin Five-Cheese Bake

Wonderful! The family gobbled this down. I lacked a few ingredients so made several substitutions. Instead of classic swiss, I used Laughing Cow bites, a colby-monterray jack mix replaced the mozzarella and provolone, and I used milk in place of heavy cream. Overall, this was extremely satisfying.

Rice and Lentil Casserole

This was FANTASTIC! It had a great flavor and the entire family loved it. Best of all, it is so easy to prepare. I changed this a bit according to ingredients on hand. I used chicken and sun-dried tomato sausage, omitted the bell peppers, and added more rice, lentils, and chicken broth. I used 3/4 cup each rice and lentils.

Long Soup

This was very, very good and exceptionally easy to prepare. I replaced some of the veggie oil with sesame oil and used 1/4 tsp ground ginger since I didn't have fresh. I also added a shredded carrot. The kids had colds/upset stomachs, and this was gentle yet nourishing. They ate it well, and we enjoyed it for lunch the next day.

Pepperoncini Beef

Delish! I used minced garlic and a 12 oz can of pepperoncinis. It works well with other types of roast too. I served it with sharp provolone on a toasted hoagie. It was too spicy for the kids, but it's too good not to make on a semi-regular basis.

Super-Delicious Zuppa Toscana

This was super-delicious! Using what was in the pantry, I omitted the bacon and used Al Fresco Sweet Italian Chicken sausage. We sprinkled a little parmesan over top before serving.

Chocolate Chip Oatmeal Muffins

Finally! This is a healthy afternoon snack, or morning breakfast, that the kids can help make. We were out of applesauce so I used 2 mashed bananas and a little oil to make 0.75 cups. I also added a touch of vanilla and used the mini-chocolate chips. I baked these for 15 minutes in a mini muffin tin. This is a muffin all of the kids will eat!

Peanut Butter and Chocolate Cake I

This review is for the cake only, as I did not make the filling or frosting. The cake is delicious - perfectly moist and dense. The flavor is best the second day. I made a 9x13, so I cut the baking powder back to 1.5 tsp, and used my own chocolate frosting recipe. I am a cake snob, and prefer scratch made, and it doesn't get much better than this.

Simple Carnitas

These were extra simple since I had some shredded pork already in the freezer. I put it in a pot with the spices and let it simmer for a while. I didn't have an orange so used mango instead. Kids shoveled the pork in.

Grandma Sherrill's Bagels

Simple and delicious. The dough is a delight to work with. I used bread machine yeast, kosher salt, and warm water, and kneaded 12 minutes or so to get it elastic and smooth (it was never perfectly smooth). You really can just punch a hole in these bagels. I shaped mine with wide holes, expecting the holes to get smaller as in other recipes I've tried, but they never closed up. After boiling, I put an egg white/water mix on top of some bagels and topped with various mixes. On metal baking sheets with a convection oven, it took about 20 minutes to cook the bagels. On a ceramic (I think) Pampered Chef pan, it took 25 minutes. I can't get over how fast and easy these were! Thanks for the recipe!
