Pecan Sticky Muffins

Muffins are delicious and an easy recipe for kids to help with. I baked mine in a dark pan and they were done in 20 minutes. Next time I will make more topping, but the same amount of batter, and make more muffins. I used 1/4 cup batter per muffin cup, but because the muffins rose they don't sit flat when inverted. With less batter they will hopefully sit flat. Also next time, I may try the metallic muffin liners to make clean-up a breeze.

Peanut Butter and Chocolate Cake I

This review is for the cake only, as I did not make the filling or frosting. The cake is delicious - perfectly moist and dense. The flavor is best the second day. I made a 9x13, so I cut the baking powder back to 1.5 tsp, and used my own chocolate frosting recipe. I am a cake snob, and prefer scratch made, and it doesn't get much better than this.

Rice and Lentil Casserole

This was FANTASTIC! It had a great flavor and the entire family loved it. Best of all, it is so easy to prepare. I changed this a bit according to ingredients on hand. I used chicken and sun-dried tomato sausage, omitted the bell peppers, and added more rice, lentils, and chicken broth. I used 3/4 cup each rice and lentils.

Butter-Free Peanut Butter Cupcakes

Very good, especially once cooled. Perfect for a snack or on-the-go breakfast. I used regular milk instead of soy, creamy peanut butter, and added mini chocolate chips. Muffins were moist and needed no frosting. Next time I might add some rolled oats for extra interest.

Double Peanut Butter Cake

The cake had a lovely texture, but it didn't taste like peanut butter at all. I frosted it with chocolate rather than the peanut butter frosting called for. I likely won't try this again, but if I did, I would experiment with increasing the amount of peanut butter.

Amy's Creamy Black Bean Corn Salsa

I doubled this and served once as a side dish and once as a dip. It received rave reviews at church. I made a few changes based on personal preferences. I replaced the green bell pepper with more red and yellow peppers, substituted plain yogurt for the sour cream, and used corn I had canned. Simple to make, versatile, and tastes great on the second day!

Buffalo Chicken Pasta Salad

Tasty and clears out the sinuses. I made several modifications and substitutions due to the pantry situation. I omitted the salt and pepper, subbed celery for the bell peppers, used plain yogurt and blue cheese in place of the dressing, and shredded some leftover roasted chicken. It's delicious warm and I can't wait to taste it cold!

Glazed Corned Beef with Lentils

Pepperoncini Beef

Delish! I used minced garlic and a 12 oz can of pepperoncinis. It works well with other types of roast too. I served it with sharp provolone on a toasted hoagie. It was too spicy for the kids, but it's too good not to make on a semi-regular basis.

Fancy Chicken Salad

Love this! I've made this twice in the past two weeks because the whole family eats it. I've yet to have red peppers on hand, but I can't wait to try it with them. I also don't have fresh dill and instead use half the amount of dry dill.

Chocolate Chip Oatmeal Muffins

Finally! This is a healthy afternoon snack, or morning breakfast, that the kids can help make. We were out of applesauce so I used 2 mashed bananas and a little oil to make 0.75 cups. I also added a touch of vanilla and used the mini-chocolate chips. I baked these for 15 minutes in a mini muffin tin. This is a muffin all of the kids will eat!

Super-Delicious Zuppa Toscana

This was super-delicious! Using what was in the pantry, I omitted the bacon and used Al Fresco Sweet Italian Chicken sausage. We sprinkled a little parmesan over top before serving.

Long Soup

This was very, very good and exceptionally easy to prepare. I replaced some of the veggie oil with sesame oil and used 1/4 tsp ground ginger since I didn't have fresh. I also added a shredded carrot. The kids had colds/upset stomachs, and this was gentle yet nourishing. They ate it well, and we enjoyed it for lunch the next day.

Cottage Cheese Chicken Enchiladas

The individual parts were delicious. I could gobble up the sour cream/cottage cheese mixture, and I used Ms. Espy's enchilada sauce from this site. The chicken mixture was also good and assembly was simple. Somehow it just didn't work when it all came together. The taste just wasn't there for us.

Chuck's Favorite Mac and Cheese

Finally! This will be our go-to macaroni dish. It's so creamy, and the cottage cheese gives it an excellent texture. It's good even if you don't bake it and can easily withstand additions like broccoli, beans, carrots or other sneaky pureed add-ins.

Extreme Chocolate Cake

I really wanted to like this cake, especially since the ingredients were simple and the cake was fast to make. The cake is moist, but just doesn't have much flavor and the texture is too chewy. If you like boxed cake mixes, then this cake is definitely for you. Otherwise, maybe you could sub butter for oil and change the texture. It's better with frosting and the recipe here is okay. I used more milk than called for to make it spreadable.

White Chip Chocolate Cookies

These are crispy on the outside, chewy in the middle, and perfectly delicious. I've made these according to the original recipe and according to some reviewers' advice to use 2/3 cup granulated sugar and 2/3 cup brown sugar. The recipe as posted tastes much better in my opinion than the recipe changed. Keep it the same and enjoy!
