Pecan Sticky Muffins

Muffins are delicious and an easy recipe for kids to help with. I baked mine in a dark pan and they were done in 20 minutes. Next time I will make more topping, but the same amount of batter, and make more muffins. I used 1/4 cup batter per muffin cup, but because the muffins rose they don't sit flat when inverted. With less batter they will hopefully sit flat. Also next time, I may try the metallic muffin liners to make clean-up a breeze.

Baked Teriyaki Chicken

LOVE this sauce. I substituted regular vinegar for the cider vinegar. Will use this teriyaki sauce on other types of meat as well. I didn't bother with the basting, but did reserve some sauce for dipping.

Glo's Sausage Fried Rice

This is fabulous! I omit the bean sprouts because they are never on hand, and I sometimes use kielbasa instead of ground sausage. Also, I usually half the recipe and still need a bigger pan. I never liked cabbage before this dish.

Broiled Tilapia Parmesan

This is my favorite way to cook tilapia. I omit the celery salt because I never have any, and add garlic powder and paprika. It's so simple and fast.

Chicken Vegetable Barley Soup

We leave out the mushrooms and almonds and let the soup get really thick. It's great with some warm bread. It's equally wonderful the next day.

Sausage Egg Casserole

It's a Christmas tradition to have this for breakfast. It cooks while the kids open gifts. I omit the mushrooms and cut the cheese in half. I typically use monterey jack or colby-jack. It also makes a great supper.

Pumpkin Cream Cheese Muffins

I never liked pumpkin until these muffins. The flavor is mild though. I follow the directions exactly and use the streusel topping for other muffins as well.

Mall Pretzels

Surprisingly easy and very tasty. I made the dough in the bread machine, used white wheat flour in place of all-purpose, and seasoned the pretzels with butter and spices prior to baking. These are delicious topped with cinnamon sugar and drizzled with honey.

Sausage & White Bean Soup

Pretty good soup. I crumbled and browned sweet Italian sausage rather than cooking it whole. I also added garlic with the other vegetables. I let it simmer for about an hour and then added a few handfuls of kale.

Richard and Suzanne's Famous Red Beans and Sausage

Of the red beans and rice recipes on the site, this is our favorite - kids included. It has the best flavor and consistency. I omit the bacon, green pepper, and butter simply because I didn't have those ingredients on hand or it seemed unnecessary. I also typically make the red beans from dried beans. It's a hearty meal for supper, and it's yummy warmed up and served as a dip with ritz crackers.

Barbecue Tofu Sandwiches

Admittedly, I have never tried tofu before. I followed others advice about draining and freezing, fried the tofu, and served the finished product on sandwich thins. This was alright by me, and one of my kids really loved it. A vegetarian friend thought it was especially tasty. However, we didn't like it enough for the tofu to make it's way onto our regular menu rotation.

Slow Cooker Italian Chicken Alfredo

For a crock-pot meal this one is pretty good. The sauce was a good consistency, meaning not too runny, and the flavor was alright. However, taste-wise, there's no comparison to real chicken alfredo.

Peanut Butter and Chocolate Cake I

This review is for the cake only, as I did not make the filling or frosting. The cake is delicious - perfectly moist and dense. The flavor is best the second day. I made a 9x13, so I cut the baking powder back to 1.5 tsp, and used my own chocolate frosting recipe. I am a cake snob, and prefer scratch made, and it doesn't get much better than this.

White Chip Chocolate Cookies

These are crispy on the outside, chewy in the middle, and perfectly delicious. I've made these according to the original recipe and according to some reviewers' advice to use 2/3 cup granulated sugar and 2/3 cup brown sugar. The recipe as posted tastes much better in my opinion than the recipe changed. Keep it the same and enjoy!
