Chicken Florentine Casserole

Reviewed: Mar. 13, 2012
Made this last night for the hubby and served with potatoes and toasted garlic bread topped with mozzerella cheese :) The only change I made on the recipe was that I used 1 can of spinach instead of 2. Im not a huge spinach eater anyway, but had I used 2, I feel it would have been way too much. The hubby devoured this and I caught him eating out of the baking dish! ;) He said it was one of his favorite meals Ive made. Definately recommend this recipe! :) Happy Eating!

Lentil Rice and Veggie Bake

Reviewed: Jul. 23, 2012
I followed the recipe to a "t" with the exception of the zuccini and celery and it came out dry. Im not sure what I could have done to keep it from getting dry during the baking time. :/ any suggestions? It was ok. not as good as I was hoping it would be.

Quick Chili I

Reviewed: Dec. 18, 2013
hubby and i loved this! the only thing i did differently was I used 2 cans of kidney beans instead of 1, did not use the pinto beans. I used crushed tomatoes instead diced and omitted the tomato sauce. Turned out brilliant! I also made homemade beer bread to go with it! PERFECT for that cold night! :)

Chicken Enchiladas I

Reviewed: Oct. 26, 2014
ok so i always read reviews BEFORE trying a new recipe. So the 5 stars is NOT for the exact recipe posted but because my husband LOVED what I made! ;) So heres what I did: i poached my chicken using red wine vinegar, 2 chicken bouillon cubes, minced garlic, salt, pepper and onion powder. I shredded the chicken and then I put some olive oil in a skillet and put the chicken, chili powder, pepper, salt, sour cream, parsley and oregano. I SKIPPED the water and tomato sauce. instead I added 1/4 cup of salsa and 1 can UNDRAINED rotel tomatoes and added a little more cheese :) Then rolled them in the tortillas used ENCHILADA sauce instead of taco sauce. cooked as according to the original recipe. served with sourcream on top and a little extra cheese and a side of yellow rice and jalapeno poppers. YUMMY!!!
