Egg Salad Sandwiches

Reviewed: Apr. 14, 2006
I only used 3/4 cup of mayo and that still seemed like way too much. I added all of the spices but could barely taste them.

Eggplant Parmesan II

Reviewed: Feb. 18, 2005
This is delicious! Even people who don't like eggplant will eat this dish. I like to add a little more cheese to mine and I bleed my eggplant first by soaking them in salt for 20 minutes & then rinsing.

Awesome Slow Cooker Pot Roast

Reviewed: Mar. 5, 2003
MMmmmm, that was fantastic. I added some flour to thicken the gravy and I think that was a mistake. The gravy was alittle runny but I think it would have been better that way. This recipe is so simple and easy, I couldn't believe how great it tasted!

Garlic Caesar Chicken Tenders

Reviewed: Mar. 5, 2003
Pretty good idea. I used about 2lbs of chicken tenders and maybe about 1/2 cup of ceasar ranch dressing with a few cloves of garlic. I let it marinate overnight. Then I rolled the strips in parmesan cheese instead of breadcrumbs because I don't like to eat too many carbs. Then I baked at 400 degrees for about 10-15 mins on each side. It was good.

Spicy Shrimp Creole

Reviewed: Mar. 4, 2003
That was great! My boyfriend said it reminded him of being back home on the bayou. I followed suggestions from some of the others. I added one chopped green bell pepper. I used one 8 oz can of tomato paste, 1 14.5 oz can of stewed tomatoes and one 14.5 oz can of rotel. I didn't really measure the spices. Just dumped in cayenne and tabasco until it looked about right. I let it cook in the slow cooker on low for 6 hours and then added the shrimp and let it cook another 2 hours. It was perfect and pretty spicy. Thanks Pamela, I've been looking for some recipes that would taste like dishes my boyfriend used to eat in Louisiana.

Better Cheddar Chicken

Reviewed: Feb. 20, 2003
This recipe is very tasty. I didn't have any corn flakes so I used bread crumbs and it still turned out great. I added some crushed red pepper for extra spice. I cooked it for 15 on one side, then flipped it over, added some more cheddar on the top and cooked for another 15 minuts. We loved it, I don't understand why noone else has tried this recipe, its worth trying. Thanks Ty.

Cola Pot Roast I

Reviewed: Feb. 20, 2003
This was delicious! My boyfriend doesn't like onions, so I used a packet of onion soup mix instead. I added baby carrots, chopped celery and chopped red bell pepper. I let it cook overnight on low and it was so tender. I used a 12 oz can of coke and it was just right. I will definately be making this again!

Cottage Cheese Spinach Chicken

Reviewed: Nov. 16, 2002
This chicken was okay, but I was really expecting something a lot better. We love chicken, spinach and cottage cheese, so I thought we would just love this dish but it wasn't too impressive. Even though I sauteed the spinach onions with some garlic and added other spices, this dish was still bland. I though the folding and toothpicks was a silly idea, so I cut a big slit in the side of the chicken and stuffed each breast with as much of the mixture as it could hold, then spread the rest out on top of the breasts. It was good and I'm glad I didn't try the toothpicks and the folding, but it just didnt' have enough spice.

Mediterranean Chicken with Eggplant

Reviewed: Oct. 25, 2002
Here is how to improve the taste of eggplant. Slice it up, then sprinkle salt generously on each side. Set your slices in a bowl or collander. Leave it for about 20 minutes. The eggplant will be covered in "sweat", because it is sweating out the bitterness. Rinse off your eggplant, and cook accordingly. Yes the water that comes off will be sort of brown. This will make the eggplant taste better and will eliminate the unnecessary step of boiling, which will make the eggplant mushy.

Easy Ham and Cheese Appetizer Sandwiches

Reviewed: Oct. 19, 2002
The recipe had gotten good reviews so I thought I'd try it, and boy was that a mistake. I love onions, but they just did not go with this. Mini sandwiches on rolls isn't a bad idea but that sauce is no good. I made these just like the recipe calls for and after a couple of bites, everyone turned their nose up at these including me. I really think kids would hate these. Unless you're adventuresome and willing to waste food, don't try these.

Broccoli Squares

Reviewed: Oct. 19, 2002
Yum, this was a big hit! I served this at a get toghether today and everybody wanted to take a plate full of these snacks home. You MUST cut the cream cheese/mayo mixture in half, though. I used 3 packages of crescent rolls, slathered a thick layer of the dressing on, and still had way too much left over!! It was very tasty though, I'll definately be making this again. Thanks Kim.
