Golden Rum Cake

Way too much rum people! I think a third of the amount in the glaze would totally suffice. I was disappointed that all I could taste was rum, not cake.

RWOP Finalist: Mounds of Joy Whipped Pie

Wow, wow, wow!!!! This should be called "Paradise in Your Mouth"!! Really, if you like coconut, this is the treat for you. I used Vanilla flavor pudding, used melted chocolate chips to drizzle between layers and on top (with toasted coconut), and made my own crust using Nila wafers, coconut, and butter. And oh, like another reviewer, I also used regular flaked coconut, which I put in the fridge while I was working on the crust. I mean, really, how can you go wrong with anything with cream of coconut in the ingredients?!!

Best-Ever Chocolate Fudge Layer Cake

This is a great cake. I never thought cake from a mix and cool whip could taste so sophisticated! My son loves this cake, and has requested it for his birthday. BTW, I doubled the frosting; both the chocolate, and the cool whip and it worked great.

Million Dollar Cake

Lovely! Made it for hubby's birthday, who said he wanted something light and fruity and not too sweet. After the first bite, he said "this is excatly what I wanted." I didn't at all get the "cake box" taste in this cake. I used a mixture of orange and pinapple juice (from the cans) in cake instead of water, and used the leftover juice to brush the layers. Wonderful cake. Frosting is to die for.

Coconut Cream Pound Cake

This cake is excellent. I think it's the best pound cake I ever made or even tasted. I don't quite understand those who claim it is dry. I think they may not be much of a pound cake fan, because the texture here is text book accurate! I do reduce the sugar to 2.5 cups and use unsweetended, powdered coconut. I also add a tsp of vanilla to the tsp of coconut extract, as vanilla brings out other flavors beautifully. Have made it a few times already; it's a keeper.

Too Much Chocolate Cake

This cake is so tasty! It is a cross between a chocolate cake and a brownie, but better than both! Add a tsp of vanilla, and substituted 1/2 cup coffee for warm water, which brough out the chocolae flavor beautifully. Delicious!
