Mini Meatloaves
Love, love, love this recipe! The cheese completely disappears, but makes the meat so tender and moist! Used crushed buttery crackers instead of the oatmeal. I didn't use the topping. I just put straight ketchup on top of my loaf, BBQ on my dad's, and nothing on my mom's. All came out excellent and exactly how each of us wanted. I use the disposable foil "mini loaf" pans that you are supposed to bake little cakes in. Cook on a rack, on a pan with sides. During the last 5 minutes of baking, I stab holes through the foil pans and let the grease drain out. Perfect!

Becky's Oatmeal Carmelitas
The BEST carmelita recipe on here! I have made several others, but they don't compare to this one! The only thing I do differently is to use 2 jars of Smucker's caramel ice cream topping instead of the individually wrapped caramels and milk. Oh, and for personal preference, I use pecans instead of walnuts. I press the bottom lightly into the pan, bake for 10 minutes, then add nuts, chocolate and caramel. Then sprinkle on the topping and smush down as hard as possible without oozing the caramel through. After baking for 25 minutes, they come out perfect and not at all crumbly! PERFECTION! And if you mix all the oatmeal/flour/sugar/butter in a gallon sized zipper bag and then bake in a disposable foil pan, you don't have a single dish to do afterwards!!!!

Oatmeal Carmelitas
Excellent recipe! My kitchen is being remodeled, and I do not have a sink or dishwasher. I mixed the ingredients in a gallon sized zipper bag, melted the butter in a paper bowl and stirred the caramel with a plastic spoon. To bake them, I bought a cheap $1 foil pan. They came out HEAVENLY and without a single dish to wash!!! It's our new favorite recipe and I am baking another batch right now!!! The only thing I did differently was to use pecans instead of walnuts. Mmmmm!
