Baked Spaghetti I

I've been on a kick with easy/lazy meals since my 19mo old doesn't let me cook. This turned out delish and lasted for days! I didn't have spaghetti on had, so I used a spiral noodle, and added lots more parmesan and some pasta sause to the diced tomatoes. Even got some sourdough dinner rolls for garlic bread. Loved it each time for 3 days straight!

Tater Tot Hot Dish I

I browned the beef and onions with tons of seasonings including garlic and even some dashes of taco seasonings. I also added some frozen french freen beens and chedder cheese to the layers. Also, I took other's suggestion and baked the tots before hand so they weren't soggy. Turned out ok, very filling meal. But, nothing spectacular. The best part were the tots! I think next time, I'll try a different cheese/veggie combo.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was really tasty and spicy, but that's most likely because I added lots more cayenne pepper to the peppers than the recipe. Even still, my husband said it could have been spicier. I sauted the peppers probably more than the recipe calls for, since I like them softer. Good stuff!

2-Step Skillet Chicken Broccoli Divan

A bit too salty, but not bad. Next time I'll try a low sodium soup and perhaps less cheese. Easy and quick, though, which is always a good thing.

Layered Chicken and Black Bean Enchilada Casserole

Very tasty! Just to be easy, I sprinkled maybe half a taco seasoning packet and some extra chile powder on the chicken and chopped onion as it sauted. And to be even more lazy, I threw the chicken/onion in a bowl with the rest of the items including the cheese and sour cream and then scooped it all in layers with the tortillas in the pyrex. YUM indeed!
