Spelt Pizza Dough

The dough handled very well and was really easy to roll out. I made two cookie sheets of pizza with this recipe. However, the taste was overpowering compared to the rest of the pizza.

Carrot and Cranberry Muffins

These are very dry and sweet. I had to mix the ingredients by hand, as the batter was insanely dry. The taste is good but if your batter seems way too dry try adding another banana or 1/2 cup greek yogurt or something.

Cherry Cheesecake Frozen Yogurt

Tasted good but even though I mixed it continually while freezing, it ended-up being almost like 1 big ice cube. Would make great popcicles though.

Blueberry Ricotta Squares

Really good and not dry at all! I used 1/2C. organic cane sugar in the bottom part plus lemon zest and juice instead of extract and butter instead of shortening. I only used one egg in the top part. I also mixed the top part in the food processor to get it really nice and creamy. FYI the bottom batter was VERY thick and difficult to mix with a handheld mixer.

Spinach Enchiladas

I have made this recipe several time for guests and it is a hit every time! The last time that I made it though, I substituted crumbled med-firm tofu for the ricotta cheese. It was fantastic! Also, I make the 10-minute enchilada sauce recipe from this website.

Coconut Tilapia with Apricot Dipping Sauce

The fish tasted starchy from the corn starch - maybe too much of it stuck to the fish, but it was terrible. The coconut I used I think was in too large of strands. Might have worked out if I had skipped the corn starch and then blended the other ingredients in a food processor.

This is not very good. It is quite sweet, not at all savory. If you do make it, I would recommend cutting the apple pieces very small, and not using as much cinnamon as the recipe suggests.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This soup was fantastic and filling! I used only 2 cups veg. broth and 2 cups of water and added two chopped cloves of garlic at the same time. Delicious.

Aloo Gobi Masala (Cauliflower and Potato Curry)

The taste isn't bad, but it is a bit bland. I would have liked it to be saucier - this dish is really just curry flavored steamed vegetables. Maybe better as a side dish than a main course.
