Butternut and Acorn Squash Soup

This is a wonderfully simple, delicious soup! It was a little too sweet for my family, so I cut back on the sugar. I've also added ginger and curry (to taste) and sliced carrots to add some extra flavor. When I'm feeling lazy, the pre-cut squash at the grocery store helps tremendously. Serve with some crusty bread and you have a yummy meal!

Flourless Chocolate Cake II

This recipe is very good. However, the first time I made it, the cake wasn't cooked enough after 30 min. I made another -- and it actually had to be in the oven for 1 hour before a toothpick came out clean. Hence the three stars ... Once I got it right, it was delicious!

Chicken, Asparagus, and Mushroom Skillet

Delicious!! I followed the advice of others and doubled the amt of sauce with a little less butter and more EVOO -- note that the original recipe is for 2 servings -- and it was perfect! The only other change I made was to add parmesan cheese at the end, right before serving over egg noodles. Thank you so much for an easy, healthy dish!! :)

Spinach Quiche

This was a delicious quiche! I followed the advice of others and halved the butter (adding a little olive oil), fresh mushrooms and instead of using 4 eggs I used 2 plus the equivalent of 2 eggs but just the whites. My 6-yr-old daughter gobbled up two big pieces! My only problem was that the bottom of the crust was mushy. Next time I'll drain the spinach better, let the ingredients cool a little more before adding to the pie crust, and will also heat the crust for a few minutes before adding the mixtures. I might even mix things up and add artichokes ... Overall this is an easy, flavorful quiche! Thank you! :)

Enchiladas Verdes

Delicious! The perfect meal for Cinco de Mayo! I didn't simmer the sauce long enough, so it was a little watery at first -- but that was easily corrected. Used only 2 serrano peppers (seeded!) and that was enough heat for us. Also, couldn't find cotija chz, so I sub't Parm. Will definitely make again ... and again ... :)
