I was a bit concerned making my corned beef in the slow cooker, since I always braise it in the oven. However, I thought it was delicious. Even my Irish father who is very old fashioned in his taste for corned beef loved it. The meat was more solid than when you braise it, and the flavor was perfect. The only thing I did differently was to cook the carrots and cabbage in a separate pot right before dinner. I just boiled them together in salted water, drained them, and covered them in the cooking water from the crockpot. You couldn't tell the difference. Thank your, I will use this recipe often.
