Good Old Fashioned Pancakes

I tried this recipe yesterday preparing my twin grandsons their first "pancake" meal - everyone loved this recipe! Like others before me, I followed the advice of warming milk and egg to room temperature - used almond milk which worked out fine - and added 1 tsp + of pure vanilla extract. Other than that, kept all the other ingredients as posted including the salt. I used a cast iron skillet on medium heat adding butter to the skillet with batch. This only allowed me to make one pancake at a time but the taste was amazing. For the adults, I added bananas and caramelized chopped walnuts to the pancake after it was in the skillet. We are not a pancake family but this recipe has certainly changed our minds - no more Bisquick for us. :)

Spinach Lasagna III

I made this last night for company and it was fabulous! I watched the video for making vegetarian lasagna so I added red roasted peppers to the layers. Additionally, I added roasted tomatoes. I ended up using a combination of a pre-prepared marina sauce and a tomato basil sauce and used more than the recipe called for. I used a five cheese Italian blend to top the last layer and put some additional roasted tomatoes for garnish. I needed to bake it an additional fifteen minutes because I used a very deep dish. I made a side meat dish - braised short rib, pork sausage, and the Nirvana meatballs in a brown sauce - yummy! Added spinach salad with kalamata olives, red onion, and shaved Irish cheddar cheese topped with Marzetti spinach bacon salad dressing with baked Italian garlic bread ....big HIT!

Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce

Incredibly good! Followed the recipe to a tee and the gravy was fantastic!! My family raved about this dish and there were virtually no leftovers! Will absolutely make this again. I was worried that the boneless cut would not be as tasty as the bone-in roast but this recipe proved that idea wrong!

French Toast Casserole

I was looking for a "short cut" recipe for French Toast when I stumbled on this one...we have a large family and by the time I serve up two French toast per person, I can rarely enjoy the meal. I was skeptical about the casserole, but it was delicious! The family loved it and we all ate together. I followed the recipe for the most part but used the suggestion to put melted butter in the bottom of the pan (about 1/2 stick), added the bread cubes to the mixture and then added to the pan, used a small amount of brown sugar for the topping in addition to the white sugar, and then baked as suggested. For bread, I used a mixture of leftover Christmas bread (Thomas's brand and had cranberries in it), sourdough bread, and Pepperidge Farm country white. To serve, I had heated maple syrup to top off a great dish! Will definitely do this again.
