J.P.'s Big Daddy Biscuits

I have made this recipe several times now and it is outstanding! I learned from my grandmother that you never knead biscuit dough, just mix it until it comes together and stop; however, the first time I made these I followed that thinking and the first cut busicuts were not nearly as light or raise as much as the second cut biscuts (the biscuits I cut from the dough left over from the first set). Now I wouldn't knead these like you would bread, but I would use the same type of motion, working the dough until it is less sticky and comes together. I get great results every time with these. So tasty and beautiful!

Red Velvet Cupcakes

These are just okay. They look beautiful and I may use this recipe if I only needed "set dressing", but I don't think I will make this again becuase they were only okay...not bad, just no wow! I selected this recipe because I couldn't find buttermilk to make a real red velvet. My first clue should have been the amount of cocoa powder it requested...I normally only use about 2 Tbs, not 1/2 cup, they were also very dense like a poundcake but moist. Once again not a bad thing but not what I look for in a red velvet cupcake. So over all, it tasted average, was too dense and too much cocoa to be a good Red Velvet...but they were very pretty and stayed moist. This might be good for someone just learning how to bake since it was very easy to follow and you could take your time making it.

Lemon Cupcake with Blackberry Buttercream

This is the best cupcake recipe I have ever made. Like others I doubled to recipe for the batter to get 24 normal size cupcakes and single batch of the frosting is more than adequate for all 24 cupcakes. The flavors are bright, fresh and absolutely delicious! The cake is the moistest from scratch cake I have ever been able to achieve there is just nothing bad I can say about this recipe. It is in my opinion perfection.

Autumn Pork Roast

This was fantastic! Love Love Love Love it! I made a few small changes though, I did not have applesauce so I blended a cup of apples with the other glaze ingredients in a blender and poured that over the entire dish. It still turned out great! If I had applesauce I would definitely put only 1/4 cup of brown sugar unless you really like the sweet. I also tripled the amount of Butternut squash (didn't see the point of not using the whole thing)and threw in a package of sliced cremini mushrooms. Still turned out wonderfully and I will be making soup out of the leftover veg (I can almost taste it now! Yummy!) If I still have any remaining pork by lunch tomorrow I'll turn them into little roast pork sliders on Hawaiian Rolls to serve with the soup. So easy and oh so delicious! Now one of my favorite recipes!

Awesome Sausage, Apple and Cranberry Stuffing

I first ate this recipe when a friend brought it to a pot luck at work...I loved it so much I begged for the recipe and she told me where to get it. It is now my go to dressing recipe and I love love love it!

Quick Chicken Parmesan

This is a great simple easy recipe. My families are fairly picky eaters but they loved this one. I was afraid it would be a little bland so I seasoned the chicken with a little garlic salt before adding it to the recipe and found this step completely unnecessary, I forgot how salty parmesan cheese can be. Excellent! The only real adjust I made was using my families favorite jar of Ragu instead.
