Apple Bread

I followed Jillian's version and it was great (as I'm sure the original was)! I hate to waste the peel so I took the peels and blended them (in a smoothie bullet machine but it could be done in any blender) with the sugar/egg mix. It tasted great and added the nutrients back in. I also used organic so the peel should have been fine.

Quinoa and Black Beans

3/5 I did not use the soy sauce because I was out. The dish was pretty bland for me. I had an easy homemade salad dressing on the side for salad and my husband put it in the quinoa. It really was delicious.

Baked Spaghetti

I made this for a dinner with guests this past Sunday. I added green pepper, onion, garlic to the meat (and 1 lb to the meat). I doubled the sauce and put a jar on the bottom with the spaghetti. It was still very dry- not one compliment (except my DH who stated more sauce wld have been better). It just didn't presentn well with the stringy spaghetti. It would work to have an extra jar of sauce warmed to put on after cooking. I used to eat this as a waitress in restaurants and they always had the same kind of dry dish problem. Honestly plain spaghetti w/sauce would have tasted so much better and be much less work and expense.

Italian Vegetable Soup with Beans, Spinach & Pesto

This is a great soup. I just added a small jar of pesto (I doubled it for a potluck) and it wasn't too much. I also added sour cream to my son's to cool it off and it actually tasted like a very yummy cream soup.
