Whole-Wheat Chocolate Chip Cookies

These are tasty and very filling. If you're used to eating 10 cookies, you'll only be able to eat 3 or 4 of these. All the taste of "normal" cookies, with a little more health.

Baked Vegetables I

I used only potatoes and zucchini. The soup mix was really strong and the vegies were dry, BUT someone suggested that I bake it covered to add moisture and help the vegies cook faster. I'll try that next time.

Artichoke Spinach Lasagna

I added zucchini to the sauce and it was yummy. Be careful not to put too much of the sauce mixture on the bottom in the first layer. Next time, I'll make twice as much and freeze one lasagne!

Barbecue Beef for Sandwiches

I used leftover roast beef and shredded it, then added it to the sauce. It was delicious. I didn't follow the exact measurements and when the sauce was too strong, I added a little beef broth and a touch of BBQ sauce. Served it with roasted potatoes and vegetables - can't wait to try it in a sandwich!

Italian Green Bean Chicken

This was delicious served over angel hair pasta, with a crusty baguette and a fresh green salad. Cheese and grapes followed for dessert. I will definitely make this again!

Summer Vegetable Ratatouille

What I like in this recipe is the color and combination of so many vegetables, except the eggplant. I hear that Japanese eggplant is more flavorful and less rubbery.

Spaghetti Squash I

I will definitely make this again, maybe with more tomatoes. I was a little surprised that the squash "noodles" was crunchy, but overall it was quite good.
