I started busing tables at 14. Bugged the GM to train me to replace his drunk not show up for work breakfast cook. It was a whirlwind, before and after cook school in the army. I was lead evening chef at the NCO club at 18. Learned you need to own your own place to get paid later. I like it better as a hobby. And something else to perfect. I learn everyday. Great website!

Wild game/fish. Italian, Tex Mex, BBQ.
US home cooking. I believe we Americans need to define our cuisine, we have one. We have a few, that does make us the melting pot of the world. I have been doing fusion my whole life, learning what goes with what. And what I like. I love running low on groceries, get creative!

My cooking triumphs
Perfect soups and stews. Mastered meats young. Good meat doesn't need a lot, good seasoning and proper techniques and temps. My first lasagna was complimented as perfect by my boss. ( Followed Directions)
My cooking tragedies
I owned a pizza place. Not surviving long enough to get my flavor profile out to my target market before went broke. LOL!
