Cocoa Rum Balls

Reviewed: Dec. 22, 2011
Wow, these were not only easy to make but delicious. I couldn't find the vanilla wafers so I used chocolate wafers and it only came in a 10 ounce package so I had to adjust the liquid to 1/4 cup of rum. I don't like things too sweet so I cut down the icing sugar to 1/4 cup. It came out just right. I dipped them in melted chocolate and put them in the fridge. It looks impressive yet very easy. Will make these again next Christmas. Thanks!

Easy Rum Cake

Reviewed: Aug. 27, 2010
It's so easy and taste so good. I tried it with the glaze and I prefer it without and just as it. I found the glaze too sweet, but I don't like things too sweet. The glaze does keep the cake moist. The cake gets better if it sits.

Cinnamon Hazelnut Biscotti

Reviewed: Aug. 27, 2010
So delicious! Not overly crunchy, but just right. I've been looking for a good biscotti recipe for a long long time. I'm so glad I tried this. Definitely going to make these again. They don't need to go in for 30 minutes. I wasn't watching it and it was almost burnt. I would say 15 to 20 minutes. This is a great base for many other flavours.

Crackle Top Molasses Cookies

Reviewed: Aug. 27, 2010
These are very good. I've been trying to find a ginger cookie recipe similar to this and have tried another one on this site and this one is the best! It's chewy in the center. Yum! I gave them away for Christmas and people were asking for the recipe:) This one is a keeper.

Emily's Famous Marshmallows

Reviewed: Aug. 18, 2010
These are great! This is my first time making any candy and it turned out okay. I didn't have a candy thermometer so I dropped a droplet of sugar into cold water to see if it formed a rigid ball and when it did, it was around 15 minutes. Mine wasn't as stiff as I thought it would be and I think it's because I didn't beat it long enough at the end. The instructions didn't say how long to beat it for. And I put mine ina 9x13 pan and it was like a quarter of an inch thick. I'll definitely try it again.

These rolls need more flavour. It lacks salt. It was a very easy dough to work with.
